There are a few on the market... Kashi makes a few decent frozen meals that won't send you into immediate sodium over load (clients particularly like the lemon grass chicken). Amy's brand does some good entrees and sides as well.
As for us... last night was homemade Spinach Pizza w/ Blue and Goat cheeses and sliced tomatoes and olives. Quite yummy. Tonight will be leftover Fish and Corn Chowder and Pizza. (Husband's on a business trip to Boston.. so we'll keep it simple).

I made cooked a few beef roasts, now I'll have leftovers for sandwiches or salad toppings, at least for a few days, unless the teens get hungrier. Eeek.

katmandu, welcome back... that "stoup" sounds wonderful...I'll be switching out the elbows for potatoes but either way, I'm there. I make a mean beef stew, but, how come I never thought to roast up some neck bones.... THX!
Last night was Sunday Chicken Leftover Use Up. I always try to use up the stuff in the fridge so that I do not create MORE leftovers. Just "picked" the chicken, made some gravy from the drippings, threw it all together w/some macaroni & a bunch of frozen peas and whatnot. Even made a plate for my neighbor and I STILL have some left!!! Frozen lunch for next week.... Well, 2 lunches, what can you do....

Last night was homemade lasagna with meatsauce that simmered all day, crusty bread, dipping oil, and tossed salad. Tonight it's leftover lasagna & chicken stew from the night before - then quick out the door for a school event!

Last night I did boneless pork chops (for the first time ever I made pork) dipped in egg, breadcrumbs, and johnny's, and then browned in oil and baked. Served with scalloped potatoes and bread. Not bad.
Night before I made hamburgers and sweet potato fries. They were great and so much better for you than fries.

We had burritoes - I'd made a double batch last time & put a pan in the freezer for a day when I couldn't cook - or didn't want to!
Regarding the frozen food vs take-out debate - I'm all for the frozen entrees! I buy them when they are on sale, so they are much more affordable than take-out! Plus, my freezer is more conveniently located than any fast food joint

Wow! I can't believe how long it has been since I've been on this site! I've taken a new job and have been putting in 60 hour weeks! Phew! But, I'm back! I've missed this site!
This past weekend I made the best beef vegetable stoup, ever! I'm like Rachel Ray, my soup is inbetween soup and stew! My husband never complained when he ate it 3 days in a row! That is how busy I am! Poor guy!
I roasted beef neck bones in a 400 degree oven for 1 1/2 hours. In the meantime, I browned cubed stew meat and removed to drain. I sauteed lots of chopped onion, carrots and celery in olive oil and butter, then added back the stew meat and roasted neck bones. I poured water (1/2 cup) into the roasting pan and scraped up all the browned bits, then poured that into the soup pot with the meat. Seasonings consisted of bay leaves, dried basil, oregano, onion powder, beef boullion and fresh chopped garlic and parsely and S&P. Two large cans of diced tomatoes were thrown in and enough water to cover. This was brought to a boil and turned down to simmer for about 2 hours. Then more sliced carrots & celery were added along with: frozen baby lima beans, frozen white corn, green beans, frozen petite peas, another can of tomotoes and elbow macaroni. I adjusted the seasonings and cooked another 1/2 hour.
Oh my, it was wonderful! I served this with homemade French Bread. Dessert was homemade apple pie.
For dinner last night I cooked egg noodles and put the last of the soup on top w/grated parmesan cheese. That was way good, too!

I totally agree with everyone. How's that for diplomacy? There are really some excellent frozen entrees. I eat Boca burgers all the time for lunch, because I have never been able to duplicate the combination of beans and grains.
Take out is usually not an option for us because we live so far away from anything decent, so if we get it, it has to be reheated.
Yesterday I made chicken stew in the slow cooker and served it with some whole grain biscuits and a salad. There is enough for my husband to eat it tonight while I go to Knit night. Since I almost never eat out, I usually indulge in junk food of some kind.

Hubby bagged a wild turkey Tuesday. I soaked the breast in brine with lots of fresh herbs for almost 24 hours then roasted it. Served it with a stuffing casserole, gravy and corn.

I absoultely agree....There are times your not feeling up-to-par and who wants to get dressed, get in the car and pick up fast food, or stop at a Bostom Market.....whatever. I will pick up Stouffers and Marie Callendar just to have on hand for times I don't feel like cooking or in a pinch for something quick. We love those Marie Callender pot pies!

texan, you did not offend me, but.... I must stand by a meal "from the freezer". And I am not talking frozen homemade kitchen leftovers.... Honest, there ARE some frozen aisle from the grocery store items that, at least, I appreciate. That's all I'm saying. Your use of the word HORRIFIC might have triggered the response... I'm just saying...

OMG you guys!! I didn't mean to offend anyone! I just have yet to encounter a "good" frozen entree or anything of that nature. My rule of thumb is just pick up some decent take out if you dont feel like cooking. So I tend not to keep those frozen dinners in my freezer. Unless you have baked some up and they were tv dinners of the homeade kind. That would be ferosh!! So yeah, then I would do it... Till then long live Boston Market.... I'm outtie...
