Had an extremely busy weekend and really didn't get to cook until yesterday. I made a huge pot of chili with all the toppings (sour cream, cheese, peppers, gr. onions), and mexican cornbread!
Dessert consisted of cherry fried pies w/ vanilla ice cream!
To Jen3314: I have to look the Onion/potato bread recipe up and when I do, I'll post for you.

Grilled pork chops, garlic mashed potatoes, green beans, and black eyed peas(put pepper sauce on mine...just like my dad I did when I was a kids). Would have been better with a pan of cornbread.

I'm starting to sound like a broken record, but we're trying to eat our freezer down and it still has venison, so we had grilled venison tenderloin, new potatoes, and grilled baby zucchini.
My sister-in-law baked cookies on Saturday, so we had a couple for dessert.

Two weeks ago I had an intense craving for ham so finally I went and bought a whole black forest ham from costco and invited my parents over. I am making the ham, green beans, and cherry pie (for dad) and my mom is bringing the mashed potatoes and gravy (only because I can not cook either of these items well) and pumpkin pie also from costco oh oh and she is making her famous home made bread rolls.
gemee I have to know what is flintstone dip?

Friday.....always something in the seafood or non-meat family. Can't get away from "not eating meat on Friday"....ridiculous I know....healthier though. Friday - Clams in a white wine sauce with linguine, small Caesar salad and Crusty Italian bread.
Saturday - Yummmmm.... I put a pot of Beef Barley Vegetable Soup on and let it slowly cook for a few hours. Cheddar/garlic biscuits.

Had a "girls' night out" last night with a friend - Pasta Luna. I had gnocchi with creamy lobster sauce and cannoli for dessert.
CiCi's pizza and a movie tonight with my boys. Looks like I'll be working off those calories all week!

I have the same thing ready for dinner tonight. I am making something a saw on a cooking show with a few revisions to fit our lifestyle. Here's what I'm making:
Flatten Chicken Breasts to about 1/2" spread with a thin layer of softened goat cheese, place one slice of baked ham (sandwich slices) on top of goat cheese, spread fresh spinach leaves on top of ham. Roll up the chicken around the cheese, ham, and spinach and secure with toothpicks. Spread mustard (whatever kind of mustard you like) over chicken rolls with a brush. If desired, you can then roll the chicken rolls in bread crumbs. Place chicken rolls on baking sheet and place in 350 degree, preheated oven and bake for approx. 35 minutes.
Hope this gives you some ideas.
