Still have that cold. Tonight I made some "cheap cheat soup." I just brown some hamburger and onions, add some canned tomatoes and tomato juce (I used mom-in-law's canned garden tomatoes and juice), throw in whatever veggies I have on hand, some bullion cubes and salt and pepper. Really comforting and good! It made my nose run.

It was a quick meal last night. Tuna Surprise, fortunately enough the whole family likes it.
Tonight beef and gravy over mashed potatoes with broccoli on the side.

Got a bad cold. Had two mugs of tomato soup from a can. It felt good on my throat! Hubby ate leftovers, poor thing.

Last night was Shepard's Pie. Always a favorite w/my husband.
And yes, though I am generally extremely organized- my freezer winds up eating stuff and then spitting it out at me years later (incidentally, my cell phone does the same thing w/messages and the dryer w/socks....but I digress...). I seem to do alright w/'raw goods' from the freezer (although occasionally a stray bag of veggies may wander off). It's the 'finished' items that never seem to come out again. I've made a pact w/myself that I will be better at the new house... and for 2 months, so good.... but there is a bag containing the left over bones from an Adobo chicken in coconut milk (which I had planned to use to make Thai chicken & Lemon Grass soup)- but who knows if that will ever actually happen..... (I feel it mocking me every time I stick my head in there)!

I begin to get lots of complaints by the second day. "Not chicken again!!"
Thank goodness, I never had that problem when I had roll-over dinners; I'd wait a few days. My sons were athletes with wonderful appetites.... my husband, also. Soup especially will keep for several days.

Okay, -that- got me laughing. Gadget Queens freezer is a blackhole!
Silly night, can you tell?
We finished up the spaghetti and chicken tonight, rotating leftovers so if we had it last night we had the other tonight.
I also baked sunflower seeds today and they came out pretty good. I was pleased.

>i put a pot of chicken soup on with a large roasting chicken (gizzards, liver, neck etc). I get a few meals out of a pot of soup.
>I simmer the soup for a couple of hours, remove the entire chicken to a lightly greased baking dish, add the vegetables to the broth and finish simmering. After the vegetables are tender, I refrigerate for another dinner. I make a pan of stuffing, and bake the chicken and stuffing for dinner. I have even stuffed the chicken and then baked it.
>When I have the soup for dinner, leftover baked chicken goes into the soup.
I love that sort of 'roll-over' type dinners; but unfortunately since we've moved (and my parents no longer live with us)- they've become increasingly harder to do. Since there are only 3 of us (and two are men/boys)- I begin to get lots of complaints of "Not chicken again!!" by the second day. I guess I could get better at freezing items for use later- but for some reason, I am great at using things out of the pantry and fridge, but the freezer becomes a blackhole to me. I tend to find that 'left over chili' that I thought I could save and use for baked potatoes- 3 years after the fact and unrecognizable!!

We had left over shells and sauce last night, tonight, not a clue as it is shopping night to pick up everything to make meals for next week...(S).... My friends laugh at me as I plan meals for Sunday-Wednesday, Thursdays-Saturdays is potluck....that way I pick up everything I need to make, have the shopping list all made out and ready to go for tonight....

We had extra kids again so I cooked some spaghetti and garlic bread, or they could have left over chicken and rice.
Now it's the left over sounds of giggling girls.

I hate to say this but we had store bought hotdogs and they were not very good! Well, we were hungry and late getting home from work, etc. I know I won't be buying their hotdogs anymore! YUCK!
Haven't decided what I'm having for dinner tonight! I'll let you all know tomorrow!

cook4us01, you inspired me! I need something quick for dinner, and the only meat I had was chicken. I put it on to boil, and cooked some spag. noodles, chopped up some frozen peppers and onions, and threw it all together with a can of spag. sauce and some shredded cheese. Baked for 15 minutes and dinner was on the table.
THANKS!!!

My husband and I call it a "core dump." You know how a computer has to dump all it's garbage before it shuts down? That's my preschooler. It's go go go go go and then crash- gone!
Took my 9-year-old for a haircut and then Chik-Fil-A for dinner. Love their coffe shake!
