Bsetefens, thank you for the recipe! Sounds wonderful and it is making my mouth water! I can't wait to try it! It won't be this weekend, too much to do. But, I will make it in the near future!

Our dinner last night consisted of marinated lemon pepper chicken breast, hash brown casserole and green beans! For dessert we had Butterscotch brownies (heated) with butter pecan ice cream. Yummy!

That's wonderful that you still have a good relationship with your DIL!

Last night I made Easy Tortellini Carbonara recipe. It was really really good. It has cheese tortellini, bacon, peas and alfredo sauce. My kids ate all of their dinner with no complaints.

I think so! She is wonderful, also. No longer with my son, but its one of those special relationships that you will always cherish, regardless of the unwanted and unexpected outcome.

It sounds like your daughter in law had a wonderful birthday meal. Last night we had left over chili and a salad. I just put my chili on top of my salad for a taco salad affect.

Sorry, caffeinated fingers double clicking . . .

Last night was B-L-T's and a quick cook navy bean soup with diced tomatoes & onion. For a special treat I thought I'd make a quick dessert using a cinnamon struesel cake mix and put in diced apples. Well, I forgot the melted butter, and it was dry - certainly didn't taste as good as it looked!

Our summer months at the lake have ended and we have returned home. Finally had our D-I-L over for her B/D dinner. Her request is always the same: Bohemian Chicken Paprikash w/spaetzels, asparagus with hollandaise, homemade dinner rolls, coconut cake from scratch with pecans and praline ice cream. :-x

We went to Beef o Bradys tonight..and boy was it worth it...
we all shared some fried garlic mushrooms and bbq wings for appetizers
and I had a buffalo shrimp wrap with pineapple coleslaw for my dinner...
SOO Good...I just gotta hit my spin class extra hard tomoro!! lol.

Makes 4 servings
2 rabbits, cut into pieces
Marinade
3 cups red wine
2 tablespoons brown sugar
1/4 cup currant jelly
1 tablespoon lemon juice
1 tablespoon cider vinegar
2 teaspoons beef base
1 teaspoon salt
1 teaspoon black pepper
8 juniper berries (or 1/4 cup gin)
4 bay leaves
4 whole cloves
1 cup flour
2 tablespoons butter
2 tablespoons vegetable oil
2 cups chopped onions
1 cup sliced carrots, 1/4" pieces
1 cup sliced celery, 1/4" pieces
6 small gingersnaps cookies, crushed

Clean and cut rabbit into pieces. Place in glass dish. Add all marinade ingredients. Cover and place in refrigerator for 3 days, turning meat occasionally. Remove rabbit, reserve marinade. Pat rabbit dry. Dredge in flour. In a dutch oven, heat butter and oil until hot. Add rabbit and brown on all sides. Pour off excess oil. Add marinade liquid and the vegetables. Cover and bake at 375 for 1 1/2 hours. Transfer rabbit to a covered casserole dish to keep warm. Remove bay leaves. Place marinate in a blender and blend until smooth. Remove to saucepan. Bring to a boil and add crushed gingersnap cookies. Stir well to combine. Pour over rabbit and serve with spaetzle, noodles or mashed potatoes.

I haven't mastered spaetzle yet--so I bought it.

I cheated and went to Costco and got their Chicken Alfredo and a garlic loaf. It was SO good. Tonight I'm making homemade stroganoff in the crockpot with cooked carrots and leftover garlic loaf. MMM, now I'm hungry for dinner.

Buffalo chicken salads.. buffalo-style chicken strips chopped up on top of a green salad. Add croutons and ranch, yum! For dessert we had applesauce cake, which was one of my grandmothers favorites when she was alive. I found the recipe this weekend and had to make it. Brought back SO many memories.

I understand. Some nights they are just really hungry or really like the dish and there goes my plans for the next day.....eaten up in one meal.


Last night we had a big pot of homemade chili and some chips and con queso dip.
