StB... What I really thought Gnalicea was going to say when asked how she made her Pierogi Lasagna was going to include actual pierogies... Loved her idea even though it wasn't what I was expecting. Love YOURs also because you ARE using them... I'll be trying them both. Oh me, just how much starch and melted butter can a body take!!! Moderation, repeat after me...

I had some family visiting from out of town so we took them out to eat. They have the best chicken fingers in the area, and since my sister took some I took some of her lobster pie. There was cheesecake and indian pudding that went around, too.
Mmm.

We had meatball soup! It's the same vegetable ingredients as beef stew, except it's made with meatballs that are seasoned and browned, and you don't thicken the broth. I served roasted red peppers and crusty french bread alongside! Cooler, rainy days make me want comfort food.

I do something similar to Pierogi Lasagne, though I make it w/real pierogis.
I heat the frozen pierogis in hot water according to package directions. Meanwhile I butter a deep casserole dish. I then make layers of pierogis, sauteed spinach (or seasoned, defrosted and drained frozen spinach), parmesan cheese, mozzarella, salt, pepper and a light drizzle of butter. I usually do 3-5 layers depending on the dish and how many people are eating. I top the last layer w/bread crumbs and bake at 350-375 until golden and bubbly on top. Yum.
Last night was homemade Cassoulet- an arduous task, so tonight will be something easy. Like left over cassoulet.

Spud Nachos!
First bake up thinly sliced potatoes. Line the baking sheet with the potatoes and then top with your meat (beef, chicken, vegetarian meat), cheese and bake until the cheese is melted. Topped with tomatoes, onions, olives, lettuce, avocado, sour cream and more shredded cheese. So good!!! You really can go crazy and be creative.

Mmm, everything is better with bacon.
We had burgers and oven-fried fries. No bacon though

Well tamire1, I didn't really have a recipe so I was putting this lasagna together making my own measurements. The Pierogi Lasagna consisted of the following ingredients:
Lasagna Noodles Onions, chopped Butter, at least 1/4 cup Shredded / Sliced Cheese (I used sliced American cheese from Deli) Mashed Potatoes, instant or homemade (for this first time I used instant)
Preheat oven 350 degrees.
All I did was cook the lasagna noodles in salted boiling water. While they were cooking I sauteed an onion (or two) in a good amount of butter. This obviously depends on taste as well as the size of the baking dish put keep in mind that this is the sauce of the recipe so anything less than a 1/4 cup of butter may be too little. I then cooked the mashed potatoes according to the box.
The last thing to do is layer this like lasagna. Start with the cooked Lasagna noodles, spread a portion of the mashed potatoes over the noodles. Add the onion and butter mixture on top and then top with the cheese. You then repeat the process.
I cooked it for 25 minutes covered until the cheese was melted.
Please note that this is not the healthiest recipe but what is a Pierogi without a "little" butter =). I hope you can enjoy it.
