It was chilly & rainy in Virginia - we had turkey chili and corn bread. I love fall!

We had pizza last night. I put a package of cooked chicken in the fridge to thaw for something tonight but I haven't decided what it will be yet. We still have a lot of fresh tomatoes so they also need to be a main ingredient.

We cleaned up leftovers tonight. I'm thinking pizza for tomorrow, we haven't had that in a while.

Baked Parmesan Fettuchini w/ broccoli, onions and spinach. The night before was Italian 2 bean salad over fresh greens. Not sure what tonight will be... I'm trying to use up leftovers from the fridge. Maybe a frittata.... We're expecting a NorthEaster here on the mid atlantic- so something comforting- and that will warm the house up a bit. Tomorrow seems like a soup night- I'm thinking French Onion Soup from Julia Child's the Art of French Cooking cookbook- always a family favorite.

Well, since I have not be able to sign on, I have not been able to post in a few weeks. So here are some of things we have eaten over the course of a few weeks.

Lasagna and green peas
bbq, cole slaw, baked beans
chicken, hashbrown casserole, green beans
enchiladas, refried beans, cheese ques.
Made Over Chicken Tetrazzini (from site) with side salad
chicken and dumplins with grilled cheese
chicken alfredo
pork chops on grill, corn on grill, carrots, brussel sprouts
chili
Sliced roast beef, mashed potatoes, green beans, baked apples

Tonight is left over lasagna with a side salad.
I am so glad to be able to sign on a communicate again!

My husband will eat most things, but there are three or four that he just doesn't like and won't eat. Eggplant is one.

Last night we had grilled salmon, marinated in sesame ginger salad dressing and pepper, mixed greens of bok choy and chard and some orzo. The cool fall is perfect for greens.

I made a huge pot of homemade meatsauce, using ground beef and Italian sausage. Half of it goes in the deep freezer and half of it is for tonight with spaghetti, green salad and ciabatta bread. Thinking ahead, I breaded and fried 2 large eggplants for tomorrow night's eggplant parmesan dinner.

We had 15 Minute Taco In A Pan from the kraft web site though I did leave all the toppings on the side since my husband and daughter don't like them all. They were able to customize their plates and everyone was happy! :-p

Well tonight I am having Pork chops with garlic mashed potatoes:) You layer the bottom of a casserole pan with garlic potatoes (store brand) and then you place the defrosted pork chops on top and sprinkle with salt, pepper, and nature's seasoning. Then you spread cream of mushroom soup on the top. Cover with aluminum foil and place in the oven at 400. When the chops are white all the way through, your ready to eat!

We had left over navy bean soup and a salad. Yesterday I went to the Farmer's Market and they had the most beautiful baby bok choy. Tonight we're having grilled salmon, rice and greens. I'll mix the bok choy with some chard that's still in the garden and cook it with onion and garlic, and top the greens with hot pepper vinegar. Can't wait.

I made an extra trip to town yesterday to buy groceries for a few extra days. There is a huge motorcycle rally starting tomorrow and I'm planning on avoiding the traffic. Although, it's kind of fun seeing some of the machines.

Tonight will be pork chops drizzled with a little olive oil, then some sea salt and cracked black pepper, along with fresh steamed greens beans.
