I made a corned beef dinner in the crockpot that turned out really well, and peanut butter pie for dessert. It was Monday and on Monday's I always make my fiance a "treat" to share at work, so this week is was pb pie.

Last night was just sandwiches because we had church activities - not a lot of time.
Saturday night we had grilled salmon, long grain & wild rice, steamed broccoli, and sliced tomatoes & cucumbers. I've never grilled salmon before, but it turned out awesome! Will definitely make again!

I also take the leftover veggies and dump them in a pot, add a coked chicken breast and some egg noodles for a simple soup/stew. I keep a pkg of egg noodles onhand just for that. I can usually make 3 pots of leftover stew with one bag of egg noodles. That is what we are having tonight.

When we do that, we call it restaraunt night. I make a menu on the computer and list all that we have to offer. Sometimes it is only 1 cup of mashed potatoes or 1/2 a chicken breast, so it may say, "chef has a limited quantity". They kids look forward to it, and often times we let them be the waitresses. Sometimes, they get very rude customers (just to help them know how a waiter feels when we complain too much). It is lots of fun.

School starts next week (wow summer went fast) so we had a "clean out the fridge" night in preparation for a massive shopping on Monday. I can't even remember all of what my son ate, I think he's heading for another growth spurt. He did a good job cleaning out leftovers though!

Macaroni Grill Chicken Marsala with linguine....found it in a box with hamburger helper and the campbell's boxed meals. It wasn't bad. I do not like wine at all, so I think this was a bad choice on my part because it comes with its own Marsala cooking wine. It was a very quick meal and has 0g of trans fat. I would like to try some of their other meals. But I must say for a family of 5, it wasn't enough. Hubby and dd#1 LOVED IT!

Pigs in a blanket (little smokies wraped in crescent rolls) and salad. My 9-year-old's favorite.

KerriOkie, This recipe makes a lot-been eating it all week for lunch. I didn't have the yogurt so I used sour cream instead and I left out the pimiento.
3 tablespoons flour 1 teaspoon chicken bouillon granules 1 1/3 cups milk 1 can cream of celery soup 1 cup plain yogurt 1/3 cup mayonnaise 3 cups cooked chicken breasts 1 can rinsed, drained artichoke hearts, chopped 1 can sliced water chestnuts 1 6-ounce package long grain and wild rice mix 1 cup sliced fresh mushrooms 1 medium onion, finely chopped 1 rib celery, finely chopped 1 jar 2 oz diced pimiento drained 1/4 teaspoon pepper 1 cup seasoned stuffing cubes
In small saucepan, combine the flour, bouillon and milk until smooth. Bring to a boil over medium heat, stirring constantly; cook and stir 1-2 minutes longer or until thickened. Transfer to large bowl. Stir in the soup, yogurt and mayo until blended. Stir in the chicken, artichokes, water chestnuts, rice mix with seasoning packet, mushrooms, onion, celery, pimentos and pepper. Transfer to a 2 1/2 quart baking dish coated with spray. Sprinkle with stuffing cubes. Bake, uncovered, at 350 for 45-55 minutes or until edges are bubbly and rice is tender
