Yesterday, I helped a friend fix a knitting problem and as a thank you she gave me some Brussels sprouts from her garden, so we had those plus some grilled chicken thighs and rice. Just for the heck of it, we tried grilling tomato halves with a bit of Parmesan cheese on top. I'd rather eat the tomatoes raw.

Enchilada casserole. I had some left over shredded rotisserie chicken. I just added sliced olives, chopped onions, enchilada sauce. I layered the filling between tortilla chips, topped with shredded cheese and popped it in the oven for 15 minutes. Quick and easy.

Sloppy Joe cups sound yummy and fast, will have to try that.
Last night, I made chicken curry and rice, one of my families favorite. It is pretty easy and slightly fast to cook, I try to have the chicken and onions already sliced and ready to go.
I have no clue what to make tonight, first day back to school for the girls' so I want it to be sort of a heary meal...they will most likely be "starving".

Prepare Sloppy Joes as you normally would (from scratch OR Manwich sauce) Using a can of (8) refrigerated biscuits, press 1 biscuit into an ungreased standard-sized muffin cups, pressing dough firmly onto bottoms and up sides of cups. Spoon 1/4-cup sloppy joe into each biscuit cup, top with shredded cheese, bake @ 400 10-12 mins...delish! I'm gonna serve with homemade baked potato chips

As a kid, I loved helping with dinner. My mother was a firm believer that all children should know how to cook by the time they graduate from high school. She also believed we all had to know how to wash, iron and clean. My brothers both made great husbands.
Our farmers market now has a vendor who sells grass fed local beef. We tried a couple of steaks last night plus green beans and carrots from the garden plus we split a gigantic sweet potato. The steaks tasted fine, but I'm really more interested in their ground meat and maybe roasts for pot roast.

I had Chinese - General Tso-s chicken, noodles, and some wonton soup. It was so yummy! And no, I didn't make it myself - this was a treat.
