I agree with everyone who is facing the heat of the summer...TOO HOT TO COOK!

So, I pulled out the old quesadilla maker and my husband, two boys, and I made our own chicken quesadillas with black bean and mango salad and a cool glass of sugar free grape Kool Aid.

Last night was salads. We had leftover green salad, leftover potato salad, and I added ham, salami, artichoke hearts and mozzarella cheese to a pasta salad. Everyone had their choice of salads, and seemed happy.

Father's day it was cold and rainy so I cooked a big turkey. It's given us lots of options for leftovers, from sandwiches, chef salad, even got some over easy eggs with turkey and melted cheese in there.

It's been too hot to cook! Turkey and Harvati sandwich on toasted Whole Foods "seeduction" bread with lettuce, tomato, and dijonnaise. For dessert an apple. Sounds boring, but I plated it nicely and thoroughly enjoyed it!

Despite the 95 degree heat at 7 PM, I look a long walk with the dog after dinner. When we got home we were both in need of something cold! He had iced water and I had a blueberry lowfat yogurt that I had stuck in the freezer. What a delicious creamy treat!

A croque madame is a grilled cheese and ham sandwich with a poached egg on top. Really simple and good :)

Last night I made moules marinieres, which is basically just mussels in wine with seasonings and a bit of parsley, and plain risotto, which I added a bit of red wine to. It was nice, I couldn't really taste anything but a hint of it......maybe I'll add more next time.

Last night we had Italian Chicken over pasta, salad & breadsticks...not sure what to do with the pork chops I've got thawing for tonight...any suggestions?? I feel like I do the same things with them every week...

A croque madame is similar to its monsieur counterpart only has an egg - usually poached or fried - on top.
A croque monsieur is a grilled ham and cheese sandwich topped with bechamel and gruyere.

What are they?

And I'm getting ready to grill some chicken (some for tonight and some for salads or whatnot for the week). My sister was telling me how they went to a buffalo wings place last night to eat, and it made me hungry, so I'm thinking some spicy saucy and maybe some fries on the side.

We grilled fish again last night plus left over rice pilaf and greens from Saturday. The entire meal, except for the rice, was from our garden or pond.

Baked ranch chicken, mashed potatoes made with the chicken pan drippings, and broccoli. Delicious, healthy, easy to prepare and the entire meal cost less than $8! Perfect!

I finally made ribs on the grill that came out wonderful along with baked sweet potatoes and a summer squash casserole and for dessert Double-Chocolate Strawberry Shortcake. :)
Tonight is leftovers, it is too hot here too cook!!

I spent the day at my sister's house in her pool and inevitably, her husband started to grill-out. We had some spicy and very yummy pork chops.

The kids finished up school for the year so I did bacon, eggs, and homefries. Breakfast for dinner celebration!
