This is too nifty a thread to go dead!
Last night I had pan-fried potatoes, lasagna, green beans and garlic bread. I think my brother-in-law was trying to drown the poor potatoes in butter, but they tasted SO good. Paula Deen would have been proud lol

That sounds delicious! Thank you for sharing it.
Tonight I'm planning on some ramen noodles with chicken flavoring, then tossing in some cubed up chicken I had as leftovers. I like to keep ramen around just for that.

Sorry, I've lived in Georgia too long. You have to add them in the right order, so everything is cooked properly and it's not all raw or mush, but basically you put all the ingredients into spiced boiling water and cook them together. If done right, it's fantastic. If not, it's terrible. Ingredients: quartered potatoes corn on the cob smoked sausage onions shrimp. I have never made it myself, but down here it's very popular for picnics. My friend, who hosted this, got the shrimp right from the shrimp boats the day before, and corn brought up from Florida just this week, and sweet Vidalia onions. It was really impressive, and well done.

Now now, did you really think you were going to get away with not telling us what that is?
And I had a kid's meal from a fast food place. Lots of work, lots of errands, no munchkin home tonight, so I just grabbed something fast.. and the little meals are enough for an adult actually. No need to supersize, folks. lol

What's great about Indian food, though, is that its really rich and therefore can be made at home.
One of my favorite recipes that I've made at home, too is malai or paneer kofta. It's like a vegetarian meat ball dish, and the "meatballs" are made from a firm cottage cheese called paneer mixed with spinach, coated in batter, fried, and then put into a tomato and oniion based curry. Of course, I always get some Indian bread to go along with it.
Try it!!

Well last night was definitely an off night. Was going to make those bbq chicken packets w/the pineapple ring but forgot I had steaks thawing. Went to make the steaks and they were still frozen and the wind was gusting 48+ so didn't want to start the grill. Then was going to make biscuits and gravy but that didn't sound good. So the kids had bowls of cereal and DH and I ended up eating left over meatballs from Scrabble night (YUM) and left over cowboy beans from Sunday bbq.

Dinner was just so-so. I made some quickie beef stroganoff over noodles (so-so) and quick sauteed yellow squash with onion and Italian seasonings (pretty good). I really dislike my squash mushy so it's a struggle for me finding a recipe that doesn't overcook the squash. I like baby yellow squash and zucchini raw the best.
