I know it's getting closer to summer because I can't stop sneezing. On the plus side, we have fresh asparagus and the strawberries are starting to form.
Saturday we smoked a smallish leg of lamb, with grilled veggies including fresh asparagus, and new potatoes. For dessert I made my BIL's favorite peach and blueberry cobbler.
Last night we had leftover lamb, rice pilaf and a salad.

We had grilled shrimp skewers (thai peanut curry, cajun, and spanish orange), curry couscous, and grilled zucchini, squash, red pepper, and grape tomatoes. It's finally starting to feel closer to summer!!
If the weather permits, I'm going to grill salmon w/ dill butter on Tuesday, and I can't wait!

Everyone but me had biscuits and gravy. I am not a fan of gravy so I just stuck to a salad. Started my walking routine back up and am FULL of energy I don't know what to do with. =)

Thanks for the recipe! Those sound great!
Alas, I had no cajun dirty rice today, but instead my sister brought the fixing for burgers so I had that and fries.

Tonight we had BBQ Chicken in the slow cooker...it was delicious!! Served with broccoli cheese noodles, sweet corn & corn muffins.
Slow Cooker BBQ Chicken 5-6 Chicken Breasts OR Boneless Thighs OR mix of both 2 cups Honey BBQ Sauce (I use Sweet Baby Rays) 1/3 cup apple cider vinegar 1/2 cup water 1/4 cup brown sugar 1 Tbsp. Worcestershire sauce 2 tsp. Garlic powder
Place chicken in slow cooker
Stir togther all ingredients and pour over chicken
Cook on low 5-6 hours. Turn up on high for the last 1/2 hour & remove the lid to thicken the sauce
You could also shred up the chicken for Pulled Chicken BBQ Sandwiches!

Last night I grilled salmon steaks coated with lemon pepper seasoning. Served them with Pasta Roni Parmesan Noodles and a salad of cucumbers, fresh tomatoes from a local prduce stand, and onions with Italian dressing. It was a nice light meal.

When some people put in a good workout, they get HUNGRY. When I do, I lose my entire appetite. I spent all day Saturday moving to my new house and so for dinner, could only manage a peanut butter sandwich. Hopefully tonight my appetite will have returned, because I have some Cajun dirty rice calling my name!

Last night I made a "Mexican Lasagna" and, while it was edible, it was very bland. If I make it again I will have to add hot sauce or something.
