So happy to here that DH made it home safe and sound. It stinks now that you have to wait by baggage claim to meet your loved ones instead of grabbing them right off the plane. The chicken fajitas sound great, may have to put that on the list for next week. Last night was left over cheese fondue w/veggies and whole wheat bread, and the lemonade strawberry pie that my bf made. YUM!

Last night I made a salad of black beans, cooked chicken, red onions, baby spinach, avocado and mango. I used a raspberry vinaigrette as the dressing. Yum.

Our chickens are in over drive with laying (happy it's spring!) so I made a bunch of french toast.

Welcome to the community, Kennco, and godbless01, how old is he? It sounds like he did great if your "yum" was anything to go by! lol
Tonight on the menu is a white lasagna, salad, and corn.

We took advantage of the really nice weather and fired up the charcoal and gas grills: hickory grilled beef filets, Yukon Gold/French onion mashed potatoes, grilled asparagus spritzed with lemon juice, and grilled caesars salad (romaine hearts halved lengthwise, drizzled with olive oil, garlic, lemon juice then grilled and topped with grated parmessan), and buttered yeast rolls. For dessert: pear, cream cheese & walnut puff pastry tart lightly drizzled with honey then topped with a dollop of whipped cream and chopped walnuts. It was great!!

I bet! Do you know if it's a boy or girl or are you going to wait and be surprised?
And tonight's menu is grilled pork chops, green beans and corn.

Thanks Cathy! I'm about 17-18 weeks depending on how you do the math. Either way, smack dab into the middle of my 4th month. Unforunately that's the time when I'm still a bit too tiny for the maternity clothes- and definitely too large for my pre-pregnancy wardrobe. Getting dressed every morning is quite an adventure!
I have to say- I could really go for some crawfish etoufee and mufffolettas! Yum. Unfortunately you don't get that sort of fare at church fairs up here in the north! Though apparently there is a good cajun restaurant/stand in the local farmers market. I'm a bit skeptical, but I've heard good reviews. I may have to check it out next weekend!

We grilled a couple of small steaks, plus grilled green onions, yellow peppers and asparagus, plus some leftover rice and broccoli. The onions and asparagus were from our garden. YAY!
I can not tell you how good the first asparagus of the year tastes.

st.b, that all sounds so so yummy!!
How many weeks are you?
We had our Church fair this weekend, so we ate fair food. Fortunately enough, it was pretty good and local (crawfish etoufee, mufffolettas).

Last night we splurged on a nice meal- grilled clams in white wine grilled steak (the boys had t-bone; I had NY strip) grilled stuffed potatoes (with bacon, sour cream & green onions) grilled fresh asparagus
It was all very yummy. The steak in particular was fantastic. We got all the ingredients at the local farmers market- and the beef was local grass fed. Big difference from grocery store cuts.
My iron levels have been a bit low- so last nights dinner was a much more pleasant way for me to get lots of iron w/o having to take more supplements! I think we're going to do homemade hamburgers w/buffalo cheddar cheese and a salad.
