That sounds really good, and easy! I like easy. :)

We had a potluck dinner Sunday night, pulled turkey BBQ, cheesy hasbrown potatoes, bean dip, and lots of salads. People seemed to bring alot of fruit salads... Seems EVERYONE is hoping for spring soon here in the great white north.

B-)i had a sodium and preservative infused turkey sub on ww from subway, and it was soooo gooood!!!

Our heat went out tonight, so I decided to warm us up with an easy home made beef stew. I can't claim to be a fabulous cook but I can hold my own for my husband and I. It was quick and easy. (Not to mention I snuck in some extra veggies that normally don't get eaten on a regular basis.

Cubed beef-precut at the grocery store
med onion
baby carrots
celery
pre-made beef gravy
peas
canned potatoes (not a big fan but had to cook quick)
sea salt
pepper
wershire sauce (to taste) (some people prefer bbq sauce)

It takes as long as the beef and veggies does to cook. I serve it with a salad and whole grain baguette lightly toasted.

MMM, I love backstrap...I might have to do that a night this week!

Last night was birthday dinner at a friends -- fried chicken, mashed taters 'n country gravy, homemade coleslaw, and buttermilk biscuits from scratch. Awesome!!

Tonight is Golden Chicken, or something like that, in the crockpot. Its from the campbell's website. All I have to do when I get home is cook the noodles!

Oh my... that sounds sooooo good. It's been years since I've had venison.

In contrast, tonight the little guy's daddy is handling their dinner, so I'm thinking something lazy, like fast food, and there is a VERY good chance that it will be something terribly unhealthy for me.. but I don't care. I'm good often enough to enjoy the occasional greasy burger.

Grilled venison backstrap, cut into steak size portions, marinated and wrapped in bacon. We also had chunks of sweet potatoes roasted and tossed lightly with brown sugar and red pepper, sauteed greens (mix of kale, spinach and bok choy) and garlic bread. One of my favorite meals, even though washing all those greens is a pain. :)

Friday: Chinese takeout and movie night

Saturday: Chicken casserole over egg noodles, sweet peas, french bread and homemade banana pudding over a couple rounds of rummy

Sun lunch: Southern buffet

Sun Pm: Steak n Shake

Not much cooking this weekend, spent alot of time with friends and family!

Fri - Pizza and hot wings

Sat. Steak, green beans, and raw carrots and broccoli dipped in ranch

Sun lunch - BLT's and oriental slaw

Sun. lemon pepper chicken, roasted potatoes and leftover oriental slaw (broccoli slaw) or salad for those who do not like the slaw.

Roasted eggplant, tri-colored pepper & goat cheese crostinis.
The night before was take out pizza from the local Italian bakery (broccoli rabe for the adults, sausage for the little one).
Tonight will be chicken, spinach and mozzarella sausages from the local farmer's market (served on local bread w/peppers, onions and local cheese), and a lentil salad on the side.

I fixed bacon cheeseburger meat loaf, mashed potatoes, green beans. And peach cobbler. Comfort food all the way. Come on Spring
