welll...last night was a shroom and mozz boca burger on ww.. (thanx biscuit!!) cottage cheese on the side... since i was at the pub tonight, i had a cup of ff cottage cheese, and fruit...no time to eat...

We had burgers and hotdogs, finishing up the homefries. Pretty simple tonight.

We had the Chicken Gyros off this site with a salad on the side. They were pretty good, but I didn't like the texture of the cucumbers with the pita bread. But definitely good enough to tweak to our tastes next time!

Home late did not have a clue - single lady living alone - not the easiest to cook for. Boiled a cup and a half of whole wheat pasta. While that was cooking melted 1 pound of light Velveeta cheese with 1/4 cup skim milk. Diced up two skinless, boneless chicken breast and saute them until no longer pink. Drained pasta, rinsed and returned to pan. added the cooked chicken breast, melted Velveeta, added on can (drained) of canned peas and carrots and one can of Rotel Diced tomatoes with green chilies. It was great with a small tossed salad and some french bread, topped with a glass of red wine. Enough left over to take to work for lunch the next day.

We had bbq pork loin, cheesy potatoes (you know the ones with crushed cornflakes on top), and strawberry spinach salad. We took our dessert, brownies with carmel chips, to share with our friends at a donkey basketball game!!!

omg ground beef shaken never stirred duh and some french fries wit a1 man i love that stuff i culd just drink it out of the bottle well no i culdnt but lets just say i did

When in doubt...ground beef! I browned it, then mixed in black beans, diced green peppers, diced tomatoes, cumin and chili powder and served it over white rice. Kind of like a Tex-Mex chili type of thing.

We had a Mardi Gras celebration at my assisted living community, I am the director of Dining services, we made Jambalya and beignets for dinner.!!

The Diet Coke is just a "tenderizer" for the roast, not necessarily to remove any gamey taste. You can use it with any type of roast, really. Can also use regular Coke and achieve the same results. HUGE wild game eaters in my house.
Oh, and supper? Chili--made with ground venison of course!

we had the Stove Top one Dish Chicken Skillet and it was delicious. My 4 year old actually asked for seconds ( a rare event...he usually asks how many bites he has to eat.)This dish had a wonderful flavor and it made enough for lunch the next day.

Why did you put a can of diet coke on your venison?
Does it help with the wild taste? We love venison ground, cube steak and sausage, but the roast always seems gamey.

We had meatballs and spaghetti,
I used 1 lb each of venison sausage and ground. I mixed it the night before with a bag of stuffing mix, 1 egg and water. It took only a few minutes, then I put them in the crockpot. The next morning I put the crock pot on and added two cans of Ragu veggie sauce and a jar of mushrooms. At dinner time I cooked some pasta and all totally enjoyed! We will use the leftover meatballs tonight to make a baked sandwich using an already made pizza crust and adding cheese! Yum!!

I found this recipe in a Kraft food magazine!

Venison roast cooked in the crockpot. Works well with beef or pork also. Put the roast in a crockpot add a can of diet coke. Cook for several hours, then add a packet of dry onion soup and cook until meat is tender enough to shred. Drain some of the liquid and add Sweet Baby Ray's barbeque sauce. Serve on rice , rolls or taco shells. Yum

We had burritos last night.
non-fat refried beans; mixed peppers and onion softened in a pan, Kraft Mexican shredded cheese, Whole-wheat tortillas. I served them with cut up fresh fruit, apples, bananas, oranges and mangoes. quick and easy
