TrueBlue, that sounds really great! I can see my family eating this while watching movies in the living room. Kind of a movie-night snack!

No cooking req'd, but plenty of pkg opening, and dumping.

There's a taco rice skillet recipe on this site that is very good, I use actual ground beef instead of the boca crumbles for mine - just brown your ground beef and drain off any grease then proceed. Also, a cheesy volcano meatballs recipe - both are hits with my dd. I also subbed string cheese (cut into cubes) for this.

brown ground beef and drain. Mix in a pack of the McCormick Tex-Mex Chili mix, or the regular McCormick Chili mix. Heat on medium Dump some salsa into the mixture, I also add in this new Queso topping/dip that Tostitos makes...stir some of that in... You can also add in some rice (Uncle Bens 90 second rice in the microwave then just dump it into the mix). After it's all mixed together, break up some tostitos chips and add those to the mixture, stir it all up and plop it on a plate. You can also put the chips whole on a plate, then spoon the meat over it and eat it like nachos!

I brown 1 lb. of ground beef with some chopped onion, then combine with a 1/2 lb. box of macaroni or similar pasta, and a small can of tomato sauce. Pour half the mixture in a cassarole dish and cover with sliced sharp cheddar cheese, pour on remaining macaroni mixture and cover with another layer of the cheese. Bake at 400 degrees until the cheese is melted.

Your casserole sounds interesting. One of my cooking theories is that if you like the ingredients, you'll probably like what happens when you combine them. This works about 95 percent of the time. The other five percent goes into my "do-not-try-this-again" mental notebook.
My husband hunts, and we usually have ground venison in our freezer which is our normal ground meat. We often just grill the patties for dinner or occasionally burgers. There are a number of ways to perk them up with onions, mushrooms or a simple wine sauce -- the same way you can vary the taste and presentation of a grilled chicken breast.

made this last night...literally threw together what I had in the pantry and it turned out pretty darn tasty
Brown 1 lb. ground beef, added can of Italian diced tomatoes (tomatoes, garlic, onion) 3 tbsp. tomato sauce and about a cup of corn, heat thru
In a glass dish I put a layer of the meat, topped with 4 slices of cheese, top with remaining meat, another layer of cheese...take a can of crescent rolls (don't unroll as usual) I left the entire roll intact and cut into 1" rolls, and put around the edge of the casserole...cooked for 15 minutes @ 375, till crescents were golden

That does seem like a lot of work, but you might want to pass this tip along to her if they seem to get too soggy...
When I'm baking something or reheating something in the oven that risks getting soggy, I take a cookie rack or broiler rack, sit it on a cookie sheet, and sit the food on top of that. Raises the food just enough to keep it from getting soggy. And a broiler rack might work best for her, because she might be able to stand them up in it since the bars are further apart.

Take your ground beef and make your favortie spagetti sauce w/ it. Take a box of mac-n-cheese and make it up. Then take your mac-n-cheese mix it w/ spagetti sacue and add corn or anything to make a simple goulash! Very easy, quick and my kids love it!

I have a friend who puts meat and cheese in the tortilla shells and bakes them. Then adds toppings before she serves them. For me, that's a lot of work, and the tortilla's get soggy in the oven.
