My Mother has used Old El Paso for years! It is the best I have tasted yet, I have tried many other brands and nothing can compare to Old El Paso!

I like to make a white enchilada. I don't really have a recipe, I make it so much its all in my head, but here goes..

Cook and shred about 4-5 chicken breasts. In a very large skillet saute veggies of your choice. I use onion, mushroom, jalepeno, and green/red pepper. Season veggies with salt while sauteeing. Add chicken. Add 1 can cream of chicken soup and sour cream to taste. Also add anyother seasoning you might like. I like Mrs. Dash extra spicy and black pepper. Mix well. Take about five large burrito-sized tortillas and fill each in a 9x13. I like to fill them right in the baking dish because theres always lots of filling and it overflows. Top with 2 cans cream of mushroom, and Mexi-blend cheese. Bake in a 350 degree oven until heated through. Let cool at least 15 minutes.

I'm with you. This is about the only type of enchiladas I make at home. My brother supplies me with a canned sauce (well in a jar) that is sold in San Antonio. I can't remember the brand name, but it's not available around here.

I don't have a specific brand that I like to use, but my favorite enchilada sauce is green enchilada sauce. I like using chicken inside my enchiladas and to have them drowning in green enchilada sauce.

Great recipe, Eemma. You're absolutely right, it's the cocoa powder. I don't usually make enchiladas with red sauce at home, but I may have to try this one.

Welcome to the Message Boards,

I don't buy my sauce because it is so easy to make. Here is "my" recipe [I don't remember where I got it:(]:

Enchilada Sauce Recipe

Ingredients:
15 min | 15 min prep | SERVES 3 -6
3 tablespoons chili powder
3 tablespoons flour
1 teaspoon cocoa powder
1/2 teaspoon garlic salt
1 teaspoon oregano
3 cups water
1 (8 ounce) can tomato sauce

Instructions:
Combine all dry ingredients in a small bowl.
Stirring constantly, slowly add enough of the water to make a thin paste.
Pour into pan and add rest of water.
Cook over medium heat, stirring constantly, until mixture thickens.
Stir in tomato sauce.
Use in your favorite enchilada recipe.
The amounts on the ingredients are very flexible. If feeding kids who do not like"spicy", You can halve the chili powder and double the tomato sauce.
Experiment to suit your taste, but don't leave out the cocoa!

What's the best tasting enchilada sauce?

Posted: Oct 28, 2009 4:55 PM
Hello all!

I'm trying to figure out what is the best tasting enchilada sauce. I made beef and cheese enchiladas once and they were fabulous, but I can't remember what I used for the sauce!! My family and I prefer the whole tortilla to be covered in sauce and not just part of it. Every sauce I have used since does not taste anywhere near what it should taste like :|

What do you think?
