Whenever we camp, we do a healthy alternative to smores. Just wrap a banana (sliced in half lengthwise and filled with chocolate chips and mini marshmallows) in foil and place in a med-low section of the fire. Cook for about 5-10 minutes depending on heat. Open and heat with a fork. Yum. The kids (and husbands) love it.

Baked beans and anything you can cook on a stick are also big favorites. We tend to do these on sticks (though if you're doing them on sticks- be sure to wrap the dough totally around the dogs and seal all seams- or the cheese will slip out. http://www.kraftfoods.com/kf/recipes/recipedetail.htm?recipe_id=53568
If you want to prepare ahead- then a pasta salad in an oil & vinegar dressing would be good. Also a muffuletta will hold well. Here are 2 recipes (one from Emeril & a more heathy option from CL).

thanks, I have a little stove and we usually make a camp fire. I always just make carne asada because its simple and easy.

Italian Veggie Pasta Salad

1 small zucchini, diced
1 container of cherry tomatoes
1 small red onion, diced
1 cup of frozen peas
1 package of spiral tri-color noodles, cooked and drained
1 cup of Italian salad dressing

Mix all together and keep cool. This will be good in the cooler for a couple of days. Bring along some bread sticks to serve with this as a lunch main course. This also works nicely as a side dish for grilled chicken or steaks or burgers.

For me, prep is the key. I like to make steak and veggies in foil packets--chop all veggies ahead of time and store in individual bags, then layer steak, veggies, seasoning, and butter and seal in foil packets and throw over the fire.

Another good camping food is corn on the cob--husk ahead of time and soak in water, then wrap in foil--these can go right in the coals.

Do you know how to make mountain pies? You can use just about anything in these, sweet or savory.

Will you have a stove at all, or just a fire?
