the quick pork medallion recipe

I did a take off on this, by using left over pork roast thick slices, did the gravy and peas, but no dressing. Instead I used leftover mashed potatoes. Browned the already cooked roast slices and proceeded. A wonderful way to use leftovers and make a "new" meal.
