Boneless pork cooked for 40 min? Nay nay.
Bone in is better and cheaper.
Would you boil beef tenderloin for 40 minutes?

Really wrong to take choice cuts and braise them. Total waste of time and money.

The pork sounds delicious! I'm always at a loss at to what to do with pork but I love it!!! Thank you all!! I love to have new ideas. My brain is just set on stuck mode right now but I love to cook!

Pork Casserole is my Son's favorite. It's super quick and easy so it's a favorite of mine too! Here are the basics you can add other seasoning and ingredients your family might like.

Pork Chop Casserole

Pre heat oven 400 degrees

4 Pork Chops ( I use thin cut boneless)
1 tbl. Veg. Oil
2 Lg Russet potatoes sliced thin
1 can cream of mushroom soup
1tsp black pepper
1/2 onion chopped (I skip this my Son doesn't like onions,
others have added a packet of onion soup mix instead)
1/4 cup to a 1/2 cup milk if you'd like (I never add it, just depend on your family's preference my Son likes a thick sauce.)

Heat oil in a large skillet over medium high-heat. Place the pork chops in the oil, and brown/ sear.
In a medium bowl, combine the soup and the milk. Arrange the potatoes and onions into 13x9 baking dish. Place the browned chops over the potatoes and onions, then pour the soup mixture over all cover with foil.
Bake 30-40 minutes until pork is cooked through and potatoes are soft.

* I add a dash of paprika and cayenne pepper for some color and spice. I have also added some fresh chopped garlic or used a can cream of mushroom soup with roasted garlic. You can also sprinkle your favorite cheese on top just remove foil the last 10 minutes of baking and add cheese !

Val, I think all of us who cook dinner on a daily basis face this same dilemma. One thing I liked to do is go here: http://www.kraftfoods.com/kf/Dinner/Pages/DinnerLandingPage.aspx

Then, on the left you can search for recipes based on ingredients. I like to plug in ingredients I have or what I would like to fix (i.e. chicken breasts) and see what comes up. I may not fix the exact recipe, but it often gives me ideas for something different.

Here are two of my recipes I wish I could make more often. My husband doesn't care for them much so I make them rarely.

Pasta & Chicken in Pumpkin Cream Sauce
Preparation 10 min. - cooking 11 min. – makes 6 servings
Ingredients:
8 ounces (3 cups) uncooked dried farfalle (bow tie) or penne pasta
2 tablespoons Butter
1 1/4 pounds boneless skinless chicken breast halves, cut into bite-size pieces
1 teaspoon finely chopped fresh garlic
1 cup cooked canned pumpkin (or squash)
1/2 cup chicken broth
3/4 cup Heavy Whipping Cream
1 tablespoon chopped fresh sage leaves
1/2 teaspoon salt
1/2 cup coarsely chopped toasted pecans (optional)
Instructions:
Cook pasta according to package directions. Drain; keep warm.
Meanwhile, melt butter in 12-inch skillet until sizzling; add chicken and garlic. Cook over medium-high heat, stirring occasionally, until chicken is no longer pink in center (8 to 10 minutes). Add cooked pasta.
Combine pumpkin, chicken broth, whipping cream, sage and salt in medium bowl. Pour over pasta mixture; gently toss to coat. Cook over medium heat until heated through (3 to 5 minutes). Sprinkle with pecans.
TIP: To keep pasta dishes hot longer, heat the serving dish or bowl. Ovenproof serving pieces can be kept warm in a 150°F to 200°F oven. Spoon hot pasta mixture directly into hot serving dish immediately before serving.

Chicken Tortilla Soup
Prep Time: 15 minutes, Cook Time: 60 minutes
Ingredients
2 teaspoons olive oil
1 medium onion, chopped
4 garlic cloves, minced
1 medium jalapeno pepper, diced [or to taste you can use just green bell pepper for color if your family doesn't like spicy food]
½ a bell pepper, diced
4 boneless, skinless chicken breasts cut into bite size pieces
2 cups frozen corn
2 teaspoons cumin
1 teaspoon chili powder
¼ teaspoon cayenne pepper – or to taste
1 can of chicken broth (14 oz. cans)
2 cans of diced tomatoes or 2 cans of tomato sauce
1 Avocado, sliced
Shredded cheese (any kind you like)
6 corn tortillas [or a crusty bread]
Instructions:
Skip this step if you are going to have a loaf of crusty bread with your soup:
Slice your tortillas into thin strips. Heat a small amount of oil in a skillet and once heated, add in strips. Do not add them all at the same time, do them in small amounts. Allow the strips to cook for a few minutes until golden. Remove and drain on a paper towel. Continue until all are done.

In a large pot, heat olive oil and sauté your onion, jalapeno, and green pepper until soft. Now add all of your other ingredients (except cheese, avocado and tortilla strips) and bring to a boil. Cook for about 15 minutes. Reduce heat to medium and cook for about 45 more minutes. Stir often.

Once done, garnish each bowl with cheese, tortilla strips, and avocado. You can even add some sour cream if you’d like.

Oh gosh, we are a family of 4 that loves food. All meats and veggies, always looking for a new casserole or stew. Nothing is off limits in my house. I appreciate your time in advance!
