This might be comming late but quasadilles are easy.....we use a sandwich maker but a fry pan will work just as well.

I know some people are not crazy about breakfast for dinner but egg sandwiches and pancakes are easy as well. If I make pancakes for dinner I just place the batter in a small cake pan and bake it, much easier than making individual pancakes and it is done at the same time.

I hope your recovery is going well!

You could also put the boys to work. Sit in a kitchen and chair and supervise!! :-D

Might be a fun, relaxing habit to get into.

Welcome to the community, Melodie. I know how difficult standing and cooking is after surgery.

I don't know who is helping you with your shopping, but this may be one time when some convenience foods like rotisserie chickens, bagged salads, frozen pizzas and other frozen entrees maybe good options.

Get your boys to help with the preparation and cleanup. When I was young, my mother was in poor health and I remember that it always made me feel like I was being included, even when I was just making peanut butter sandwiches.

Welcome to the community Melodie. =)

Stuffed shells or lasagna, as well as meatloaf are easy and freezes well, doing it in smaller pans will stick to your weight limit. (You could do the meatloaf in muffin pans.)

I hope your recovery goes smooth and quickly.

Need Easy Dinner ideas I just had surgery

Posted: Jul 14, 2009 3:42 PM
I need some easy dinner ideas. I just had surgery a week ago and my church has sent and brought enough food till Friday. We have 2 boys 8 and 10 and they are not picky eaters. The big issue is I can't stand for very long and I can't lift anything more than 10 lbs. I didn't realize how light 10 lbs was until I couldn't lift it. If anyone has any ideas that would be great. Thanks :)

Melodie
