Spicey Chicken Mac, I also tried this recipe, with the tomatoes with green chillies, WOW was it HOT! I really like hot or spicey food, but that was a little to much. i really liked it and will make it again, but without the "green chillies", . Granna

I tried the potatoes in the foil too, and I didn't think it turned out that great. It seemed as if it didn't cook long enough. Next time I'll have to try adding onions and garlic and cooking it for longer. That sounds much better!

I did this, but instead I subbed beef tenderloin, and added some bacon, and a seasoning packet and it was great!
Also had some snow crab....wish I had thought of the pudding parfaits...I could have done that, but I would have subbed the parfaits with jello shots. Yay!

I have tried the potatoes in the foil packets with the sun-dried tomato vinagrette on the grill and they were good. Add some garlic and onion to the packets before grilling and they were great. Also made the frozen pudding parfaits (back cover). My son(age 3) cannot have ANY sugar so I made the whole recipe using sugar free ingredients and nobody else could tell the difference, they were really great! Will do this one again. Also made the spinach dip with the roasted red peppers and cheese crumbles....this was good also although I am not a big fan of peppers...really good with the "Toppers" garlic and herb crackers.

I made the cheesburger roll too. It was really good. It was even good the next day for lunch. Cold or warm. Next I'm going to try it with mushrooms and swiss cheese.

pork melladions r great my husband hates chicken i have sub chicken instead of pork but it is great and low fat makes even better this is a must try

I made the Pork Medallions Alfredo from the spring 2007 issue. It is great, my kids even liked it. I would advise to double the sauce for this, there was not much to put over the egg noodles.

I tried the bacon cheeseburger roll-up and the no bake oreo cheesecake -so far both were delicious!
Anyone make the orange squares or lemonade stand pie? I think I will try those next...

I made the Spicy Chicken Mac Skillet (on the very last page Summer 2007) but my version was an UNSPICY Chicken Mac Skillet. For the can of diced tomatoes w/green chilies, I substituted a can of diced tomatoes with basil, garlic, and oregano. And I sprinkled some plain old sharp white cheddar on the top, since that is what I had on hand.
I was amazed and pleased! My whole family ate it and most of them came back for seconds...and thirds...until the whole pan of it was GONE! I have 5 kids ages 10 thru 4. My 4 year old is being picky lately...she only ate the chicken out of it, but she tried it...which is more than she usually does. One of them doesn't like tomatoes, and he ate it, but he's the one who didn't come back for seconds.

I had a cookout this weekend and I made the So-easy Ice cream cake and Mediterranean Marinated Vegetable salad. YUMMY YUMMY YUMMY!!!!! Everyone loved both recipes. Very easy to make. I will be making both again real soon.
