Just about everyone was having problems logging in. It seems to be fixed now, so welcome back!

Sorry I didn't reply sooner, but for some reason I couldn't log in......I changed my ID & now am able to get in 
If you STILL have zucchini, I like to make the following; Minestrone soup Sausage-stuffed Zucchini Garlic Roasted Potatoes and Zucchini Zucchini Stir-Fry

Jen, Sorry about not responding to you about the zucchini crab cakes--this is the first time I could get back into the message boards since Sept 7--it is so frustrating!! Anyway, if you happen to still have zucchini and want to try the crab cakes here is the recipe:

Try them--they aren't bad--but I wouldn't say they compare to real crab cakes like the comments do. Barb

I freeze zucchini shredded and when I thaw it out I place it in a collander to drain while thawing but I don't press any liquid out. I haven't had any problems baking w/it this way.

When I'm cooking with one I shred it with a grater over a strainer. That cuts some of the liquid out, but the rest (at least in my bread recipe) is needed as a source of moisture.
As for freezing zucchini alone, I'm not sure. From what I've read you don't need to drain it before freezing, but maybe one of the posters has first hand experience with some advice.

I made the bars that was kindly left on my post about a month ago, but I have a question-when you shred it, do you drain it before you bag it for the freezer? I pushed it through a sieve before using it for the bars as it seemed very wet. Just wondering-thanks!

I've posted mine a few times. This one freezes well as bread or muffins.
~~Zucchini Bread (Double batch) 6 cups flour 2 cups sugar 2 tsp cinnamon 2 tsp salt 2 tsp nutmeg 2 tsp baking powder 2 tsp baking soda 4 cups shredded zucchini 2 cups nuts (walnuts) 2 cups raisins (optional) 6 beaten eggs 2 cups oil
Sift dry ingredients, add remaining and mix. Bake 325 for 1 1/2 hours until the pick is clean.

thats what i am going to try. someone mentioned in this thread about zucchini cakes so, i can only assume...LOL. boy do i love my food processor!!! i have grated 1/2 of it. made match sticks out of some of it do deep fry, and and sliced some of it to steam up for the hubby since he loves it. i am off to make the bread., found a great paula deen bread recipe. wish me luck!!!

Are you thinking of subbing the zucchini for the crab? I say, give it a shot and tell us how it turns out.

i have been staring at it for a long time now... about 3 days. tomorrow is the big day.
so i thought about shredding most of it... i would love a good zucchini bread recipe, and another question, can i use my recipe for crabcakes, but just sub the zucchini instead? or are there other instructions... definitely going to fry some up...

This year, because of all of the rain, our squash plants were not very productive, but usually I take any excess and coarsely shred it and freeze. I double bag it and then use it in spaghetti sauce or for quick breads.
The abundance of this vegetable is probably the primary reason we have so many unusual ways to fix it. Desperation!
