Hello Kraft Community, we are very excited to share some great news with you. As loyal Kraft Community members we have heard your desire to do more fun things in the community and we are happy to announce in January 2010 we will be making some changes so you can connect and share food ideas in more ways than ever!
We want to let you know we will not be transferring the existing discussions to the new enhanced message boards so if there are discussions that you would like to save please make sure to either print them or copy and paste into a document that you can save to your personal files.

Creamed corn is usually created when you scrape the cob for extra juice. I've frozen the older corn and used it, but it does take extra cooking time. I like potato corn chowder in the winter and frozen corn works great, but I always have to remind myself to cook it first if the recipe calls for a can of corn.

We've always had good luck freezing it. It tastes really good for Thanksgiving and Christmas dinner!

Here are some ideals, unless your wanting to know what to do with it so that you don't have to eat so much! now!, The freezeing is a great ideal,since your only getting a few ears at a time, maybe canning some. I wish I had a generous neighbor like that who grew corn! My son and I love corn on the cob and could eat it every day for every meal!

I tried to post this yesterday but my keyboard was doing some really bizarre things!
This site has some very interesting things to put on corn on the cob; some even look good to me. 
I make an "old fashioned" cream corn for my husband with the left over corn on the cob. I cut the kernels off the cob and heat them with a little butter, cream (Half and half) and salt and pepper.

First, I would find some kind words to tell my neighbor not to bring me anymore corn because you have more than enough. 
Next, for the remaining corn you do have I would pull the husk, wash the ears of corn off, blanch (bring to a boil), and put them in a gallon freezer bag and freeze. This way you can save the corn from turning into starch and have corn on the cob to eat whenever you want.

I pulled up some past posts about using up all this summer corn that's so great right now. Thought I'd start all over, maybe spark some new ideas... My neighbor brings me 4 or 5 ears everyday and I'm getting sick of my routine preps. Any ideas??? I hate to let it sit and go to starch but I'm beginning to dread opening my vegetable drawer. Help?
