I have stuffed my turkey with apples,onions, celery, you could add what ever vegs that you like. Just cutting the veges into med. to bite size pieces. I also tried, found in a recipe, putting celery and carrots( cut into long thick strips) on the bottom of the pan and resting the turkey on them. It was really good. annaskf

If someone wants to make the stuffing vegetarian, then simply omit the sausage & use a vegetable broth. Hm....I'll bet using apple cider as the liquid would be tasty. Or maybe even wine?
Now if the guest is the sort of person who doesn't deal with any animal products...I think that's a vegan? You'll also have to substitute an oil for the butter.
LOL and DEFINITELY bake in a casserole dish, not inside the bird!!!!!

I think the OP is asking for a vegetarian stuffing that can be served to her hippie tree-hugging non-meat-eating friends when they drop by uninvited at Thanksgiving and expect to be catered to. I would not use Stove Top for that purpose.

I'm not sure I understand what you mean by a 'veggie' stuffing.
A basic recipe is: 1/2 cup Butter 1 cup chopped celery 1 cup chopped onion 1/2 cup chopped fresh parsley 1 pound dry bread cubes 1 1/2 tsp. salt 1/4 tsp. pepper 1 T. sage 1 cup turkey or chicken broth
Saute the onion & celery in the butter. Mix in the parsley, sage, salt & pepper. Toss with the bread crumbs. Add the broth & mix well. Either stuff the bird or place the stuffing in a buttered casserole dish. Cover and bake at 325º for about 40 to 45 minutes.
I usually add sauteed mushrooms & crumbled, browned sausage to my stuffing. Some years I will add in a chopped apple or two. I've tried with with cornbread & with wild rice, but my family wasn't excited about those.
I have also seen recipes with walnuts, chestnuts, raisins, or dried cherries, but I have never tried those. Usually it's a half cup or a full cup. Like the other poster, I don't always measure things. I just add until it looks like a good mixture of the things I personally like

well, my family is of good size, so you may have to down scale some, and there's no exact recipe, but I'll do my best. we always took 3 loaves white, 3 loaves wheat, and 1 loaf rye, laid them out to dry the day before. When it was time to make it, we'd chunk it all up and sprinkle sage over the bread. Take the neck bone and packaged innereds from the bird put in a pot with chopped onion, celery, garic, salt and pepper, some savory and some finely chopped carrots, use a couple cans of chicken broth, and then some water boil it till it's all cooked real good then take the turkey parts out, remove the meat from the neck bone and put the meat back in take the rest of the inners and mince up real good and put back in the pot too. let cool some lightly pour over the bread and toss. We always stuffed the bird and put whats left in a pan to cook on the side. I know a lot of people say, don't put the stuffing in the bird, but we always have and I think the stuffing from the turkey tastes even better. Sorry it's not an exact recipe, but mom was never a measuring recipe user, so I hope this can help.

So how veggie are you talking? A bread stuffing with veggies or a mix of veggies stuffed in the bird ? My sister in law does hers that way, don't care for that much, but nothing could ever stand up to my mom's stuffing she made every year, some things just can never be quite duplicated I guess.

I use Stove Top as a base, and add sauteed celery, onion & mushrooms. It really tastes like made from scratch.
