Hi bstefens, Thanks for sharing your recipe --- I like way the red and green bell peppers are cooked with the shredded beef at the end. I am going to try it!

Michelle, My recipe is almost like yours.
Italian Beef 1 3 pound boneless beef chuck roast 1 teaspoon italian seasoning 1/4 teaspoon cayenne pepper 1/4 teaspoon pepper 1/4 cup water 1 16-ounce jar sliced pepperoncinis, undrained 1 medium red bell pepper, julienned 1 medium green bell pepper, julienned 1 clove minced garlic 1 envelope onion soup mix 2 tablespoons worcestershire sauce
Cut roast in half; place in 5 quart slow cooker. Sprinkle with italian seasoning, cayenne and pepper. Add water. Cover and cook on high for 4 hours or until the meat is tender. Remove roast; shred meat with 2 forks and return to the slow cooker. In large bowl, combine the pepperoncinis, peppers, garlic, soup mix and worc. sauce; pour over meat. Cover and cook on high for 1 hour or until the peppers are tender. Spoon beef onto buns or italian french bread. Add provolone cheese on top if desired.

That's definitely not Chicago-style Italian beef.

1 rump roast (6 lbs.) ½ cup KRAFT Zesty Italian Dressing 1 envelope onion soup mix 1 can (10.5 oz.) mushroom gravy 1 tsp. garlic powder ½ tsp. oregano ¼ tsp. basil ½ can beer 10 peperoncini
Place rump roast in crock pot. Mix remaining ingredients in a large bowl. Pour over roast. Cook on low setting 8 to 10 hours. Remove roast; slice or shred meat. Return meat to crock pot. Serve beef with juice on rolls or hamburger buns. (You can top with sweet peppers or peperoncini.)

Actually, if you want an Italian beef like those served in Chicago, try this:
In a crock pot take a 4 lb sirloin tip roast, (trimed of fat) to it add 3-4 cloves of garlic, crushed, 3 tablespoons of oregano, 2-3 cups of homemade beef broth, salt and pepper to taste.
Cook on low for 8-10 hours, shred meat and serve on crusty rolls.
easy and great. BTW, You can serve sauted bell peppers or hot peppers with this. People just eat these up!

That's a calzone not an Italian beef.
