Oh good! I was wondering how rice and a few other veggies turned out in the freezer. I have green peppers in there right now. I like both of your ideas, I'm gonna have to save some more food now! Thank You!!

Growing up there was always a leftovers container in the freezer. Any cooked veg, pasta, rice, beans, meats (within reason) that were left over and not "enough to save" were put in there and when it was full...voila! Stew of some sort. It sounds gross, I know, but in practice it's quite good. Add broth, spices, etc and there you are. Quick and easy.

I like to freeze my leftovers and for Saturday lunch we have freezer suprise. Whatever containers I grab, surprise we're eating...
I keep a container for leftover veggies and when it gets full I will use them for casseroles or soups.

leftovers make quick lunches

I got sick of seeing small amounts of leftovers taking up space in my fridge. You know those items from recipes that didn't require the entire package? I've decided to get creative and combine some ingredients. Here is one I just tried for lunch.
PIZZA QUESADILLA One flour tortilla 1 Tbs (a few spurts from the bottle) pizza sauce 1/4 cup (handful) shredded cheese 5-7 slices of pepperoni (your choice) add veggies of choice, optional
spread sauce on tortilla. sprinkle cheese on half. spread out pepperoni and veggies on the cheese. Fold the other half of the tortilla over the cheese and pepperoni. Warm in the microwave for about 30 seconds or until cheese is melted. Slice into 4-5 pieces.
I wrapped it in cling-wrap and took it to work. Warmed it up right in the wrap. I was surprised how good it was. I know it's not good for you, but I didn't go hungry!
What lunch creations have you come up with?
