This came from one of the ladies in my church. I have never had cornbread this good. This is the recipe I always use now. It is thinner than normal. I am also asking a cousin for the other recipe you requested. The man she lives with comes from and Irish family. I will share when she does! :)

Cornbread

Wilma Magnus

1 c white cornmeal
1 c all purpose flour
1 Tbsp brown sugar, firmly packed
¾ tsp soda
1 tsp baking powder
1 tsp salt
2 eggs, well beaten
¼ c melted shortening
1 ½ c buttermilk

Using a whip and mix everything but liquid shortening. I use an iron skillet, I put the ¼ cup liquid Crisco in it and put in preheated 425ºF oven. Save 1 Tbsp of shortening in skillet, Pour rest into mixture, whip good.

Pour into skillet and put into 425ºF oven for 28 minutes. (Wilma-It takes 28 minutes in my oven, may be more or less in yours)(Carrie- Mine took a few minutes longer.)

When you take skillet out of oven run a spatula around the skillet and on the bottom. Turn out of pan.

I go by looks (love that cooking technical term!) with mine. I like a lot of liquid to steam it good and soft and sink the flavors through everything. Depends on the size everything I put in. I have to be able to see the liquid among the veggies.

"Boiled Dinner" is a traditional New England meal. It is similar to Irish Corned Beef and Cabbage. I grew up with it as a common meal in fall and winter.

Is 'boiled dinner' a regional thing? I'm not familiar with the term.

Deanne, when you make it in the slow cooker, how much liquid do you add?

If it isn't boiled it's not a Boiled Dinner -- and you miss out on the wonderful broth from the meat and veggies!

This is how my family makes it:
Ham (with the bone - they have to have Pea Soup & Johnnycake as one of the leftover meals later -- and usually hash, too.)
Peppercorns and bay leaf for seasoning
carrots
onions
cabbage
potatoes
[you can also add turnip or rutabagas, beets, green beans, and/or celery if you like them.]

Put the ham in a big pot. Add water to cover it. Simmer for 1 1/2 to 2 hours (or so).
Then start adding the carrots, onions, potatoes, cabbage, etc. in the order necessary to cook them all so they are done at about the same time.

I think it is very similar to an Irish Corned Beef and Cabbage. It is a very forgiving recipe and really is one of the recipes that don't take much skill other than to know about how much time the different veggies take to cook.

Does it have to be boiled? Otherwise, I'd bake the ham, braise the cabbage, and roast the root vegetables.

Hi Linda17955, That's one of my favorite meals to make with left over ham, I've never put all of those vegetables in it, but it sure sounds good. Using the left over broth from the ham ,( if you don't have left over just start with the ham cut in large pieces, put enough water on it to cover it 3-4 inches. Boil the ham until your water looks more like broth, if the ham dosn't have much fat on it or if it's pre-cooked I don't cook it, I fry some bacon to get the grease, about 1/2 lb., starting with grease/oil in the pan to start with, so you'll have about 1/2 c. of bacon grease, I know this sounds like a lot, but the fat really helps give it flavor). Put your ham and vegetables in a pan and add enough broth/water to come 1/2 way up the vegetables. I would use 1/2 med. head of cabbage,4 turnips,2 med. or 1 lg. parsnips,1 med. or lg. onion ,all cut up into bite size pieces. Cook all together until vegetables are tender and most of the broth is cooked off. Be sure to salt & peeper when about 1/2 way done. I personally love to make corny corn bread using Jiffy Muffin mix and following the recipe on the box for it. Lots of luck, annaskf

Looking for good recipe for "Boiled Dinner" w/ham, cabbage, turnips, parsnips, etc. Quantity to serve 8 to 10 people. Also good recipe for "corn bread" to service with this dinner.
