Hello Kraft Community, we are very excited to share some great news with you. As loyal Kraft Community members we have heard your desire to do more fun things in the community and we are happy to announce in January 2010 we will be making some changes so you can connect and share food ideas in more ways than ever!
We want to let you know we will not be transferring the existing discussions to the new enhanced message boards so if there are discussions that you would like to save please make sure to either print them or copy and paste into a document that you can save to your personal files.
We will remind you again before the transition occurs but wanted to let you in on the exciting news!!

The update is....... we had a LOVELY dinner of roasted chicken w/a bunch of requested sides. AND, I'm invited over for a demo of this "pork rind chicken breast". HOWEVER, funny thing, I didn't catch a date on that invitation... Go figure! We all know he does not have a clue! I'm not new.

The technique of asking for a demonstration from the requester works on husbands too. My husband never liked the way I cooked his eggs, so he does all the weekend breakfasts now, except for baking the biscuits.

A plus side would be that if he thinks you might have him cook all his requests for you, he may stop making special requests and thus simplify dinner. lol
Either way, it works for you - he makes it, or you don't make it. 
If he does make it, though, let us know how it turns out.

NMUmom, thanks much for the suggestion. But, I must admit that after much research (I'm a big goof about finding ideas for ways to do stuff, it's a curse!) I will be simply roasting a chicken w/all of the requested sides. I will let my beloved son make ME pork rind crusted chicken at a later date and then follow HIS technique. Turn about, they eventually reach an age when you can sit back and ask THEM for stuff... AHHHHH. Only advantage I've come across for old age so far...

My suggestion is to go ahead with the pork rind coated cutlets for the birthday boy, and make the roast chicken also. Assuming not everyone will eat all the roasted variety, it's always great for leftovers. Who says everyone has to eat the same thing - make him happy and who knows, maybe he won't be crazy about the pork rind variety and ask for it again!

I agree with Eema, no carb can be unhealthy as opposed to low carb. I wouldn't think any amount of bread crumbs you use in your recipe would be that big of a compromise. I've seen chicken and fish recipes where you coat the chicken with ground nuts like almonds or pine nuts along with some seasonings. Grated parmesan cheese might make a nice coating, too - just be careful not to burn it.

Thanks MUCH for the input Eemma.... The whole meal drama is for my son's birthday this Sunday... He's the genius who planted the "pork rind coating" in my ear with, OF COURSE, no suggestions on exactly HOW to make that happen. I am still on the fence about trying the "pork rind" thing, or just going w/my simple roasted whole chicken. We shall see, but THANKS just the same... decisions I must make.
