Hotbiscuit,
I use that same dressing recipe, but I put it over spinach, aspargus (blanched) and strawberries. It is awesome. You can also serve blue cheese on the side for those who like it.

Spinach Salad
1 c salad oil (veg oil)
1/3 c white vinegar
1/2 c sugar
1 t dry mustard
1 t salt
1 t poppy seed or celery seed
1 T chopped onion
Mix all together and pour over spinach. Can add dried cranberries (or fresh strawberries), sliced almonds, Feta cheese (or shredded Parmesean)

Grilled asparagus is really easy and yummy. I coat w/olive oil, sprinkle w/salt and pepper and grill until tender crisp.

Type in rhubarb in the grey search tap and there was thread a while back that had some great rhubarb recipes.
