To 3 boxes of frozen spinach, thawed over a low heat in a pot on the stove, add 1-8 ounce cream cheese (or more), 1 stick of butter - cook until it is all melted. I usually also add a little of whatever cheese I have in the frige - asiago, Pecorino romano, mozzarella all work well. Add to this 1-15 ounce can of drained, quartered artichoke hearts (2 cans if you really like them). Season to taste with salt and pepper. You can serve this as a warm spinach dip or as a side dish by placing in a casserole, top with buttered bread crumbs and bake for about 30 minutes. If you want to serve as a side dish, double the recipe for a 9 x 13 casserole.

Stuffed in celery, on melba toast, (bagels & english muffins, naturally). Also, when I was a kid my grandma used to make me cream cheese sandwiches for lunch. I still eat those sometimes. YUMMMMMMM!

very similar recipe her but omit the layering. my dad mixed crab with cream cheese, a bit of horseradish and a small chopped onion. mixed it up in a bowl and topped it with heinz chili sauce. he would do it with canned crab or canned shrimp. cheap. but so good. serve it with ritz crackers. i like the added ingredients. thanks!!

I have to say, everyone that comes to my parties comments on how good it is. I always make 2 platters of it or else I run out way too quick- before anything else and it's just so easy to make!
OH! almost forgot, sometimes I use cocktail sauce instead of the chili sauce, ( personally I like it better that way, my sister likes it best w/ the chili, so your call )

Hey Jen, sorry took so long- prepping for a big family hog roast this weekend. Here's that recipe; LAYERD CRAB DIP 2- 8 oz pkges softened cream cheese 2 Tb lemon juice 1 tsp worcestershire sauce 1/4 tsp garlic pwdr 2 Tb finely chopped green onion 3/4 cup chili sauce 1- 16 oz can crab meat, drained
In large mixing bowl, beat cream cheese, lemon juice, worcestershire, and garlic pwdr until fluffy; stir in onion. Spread cream cheese mixture in a 6" circle on a serving plate. Top with chili sauce then crab meat on top. Chill and serve with crackers .

Really they are quite good with just the cream cheese and ham as is. For variety though, you might even try a spicier deli meat...pastrami, salami, etc, instead of a ham slice.
Also, you could stick a suffed olive on one end of the toothpicks, or a cherry tomato for color and added flavor?
Paint on a very slight amount of horse radish, dijon or sweet yellow mustard on the cream cheese before rolling it up.
Experiment and if you come up with more ideas, please share it. Thanks
