I've made this recipe for Bacon, Cheese Potato Chowder a couple times and it is really simple and yummy:

Some types of kale just seem naturally more bitter to me, but your idea of draining slightly cooked kale would work. Chard is also a good green to put in soup. The stalk is a nice substitute for celery when it is separated from the leaf and sliced.

Glad you liked the soup Vanessa! If you are looking for more recipes, I probably can post more that are "off the beaten path"....it is nice having recipes that are a bit different than the usual....

As far as kale goes, I think if you simmer it in plain water about 5 minutes, then drain and add to recipe, it will cut down on the bitterness.

I love the Olive Garden Zuppa Toscana and they use kale in that. I'm not a big fan of kale either, too bitter to me, but made in a soup, it takes on a much better flavor. And I am going grocery shopping next weekend, and I think I'll be adding the ingredients for this soup to my list. lol

The Chicken Tortellini Soup was delish! My husband and kids loved it. I did revise it a little. Instead of using chicken broth I use water and added fresh carrots, celery, onions, a bay leaf and some parsley to the soup. We also had breadstick alone with it.

The Chicken Tortilleni Soup really is good. I forgot to add that I usually add chopped carrots as well. You can also use fresh spinach instead of frozen, adding to soup in the last few minutes of simmering and heating.

I hope you enjoy! I usually thaw out a loaf of bread dough or dinner rolls, and have them ready for the soup is done. It is great on a chilly day!

Oh val, that looks so great! I'm not a big tomato fan, though, or spinach, and was wondering if replacing the spinach with kale and removing the tomato would still work?

Chicken Stew
1 boneless skinless chicken breast, cooked,and shredded (use water from chicken to add to soup for liquid)
1 can carrots*
1 can peas*
1 can stewed tomatoes*
1/3 pkg of egg noodles cooked (I use water from noodles, as liquid for the soup)
1 can corn*
*of course all these veggies could be fresh or frozen...I use canned veggies to help with time.

Combine all the ingredients...of more liquid is needed...you can add water or reduced sodium chicken stock.
Bring to boil and simmer on stove...or dump in crockpot.

Veggie Soup
1 pound hamburger meat, cooked, and drained
1 can green peas
1 can green beans
1can blackeye peas
1 can carrots
4 pototoes, cubed and cooked (dump water and all in)
1 can Beef Consome' Soup or you can use tomato paste

Combine it all, and bring to boil, then simmer.

I love to make my chili with pinto beans instead of kidney beans...they are more tender.

I've got this going in my slow cooker right now...

Italian Sausage & White Bean Soup
4 cups Chicken Broth
1 15 oz. can Diced Tomatoes w/Garlic & Onion (do not drain)
1 15 oz. can White Beans, drained & rinsed
3 links of Italian Sausage, cut into 1" pieces
1 onion, diced
1 tsp. Italian Seasoning
1/4 tsp. Ground Red Pepper (or more if you like it hotter)

I use a Slow Cooker but this can be made on the stovetop***

Put all ingredients in the Slow Cooker EXCEPT the white beans

Cook on low 4-5 hours, adding the beans during the last 1/2 hour of cooking

Serve with a sprinkle of parmesan cheese and crusty bread

*** To make on the stove top simply saute the sausage & onions in olive oil till cooked thru - add to a pot of warmed broth, tomatoes, beans, etc. Combine, eat!

Vanessa, my husband really has to watch his salt so the things I used that are processed or canned, I have to check carefully for ingredients and take their combined salt content into account. I use canned beans a lot when I don't have any saved, but I always rinse them.

When I make chili, I use cooked ground meat, canned black bean (drained), homemade salsa (which is low salt) or no-salt canned tomatoes, and a combination of seasonings including cumin, chili powder and a southwest seasoning blend that is no salt. I also use fresh tomatoes if I have them, onions and peppers. Sorry I don't have proportions but I never measure for this, but you get the jest.

I've found that I just have to look at everything and consider what I'm including and do the best I can with fresh or frozen ingredients. Now more canned products like tomatoes are being offered without salt.

Thank you for your recipe. However, your recipe is not what I am looking for. This recipe is nothing more than soup from a can. I'm looking for homemade soups, stew, and chili such as the ones posted below.
