I agree with Vanessa and Eemma. You have to cook it longer. I like regular pasta pretty al dente, but whole wheat pasta needs to be cooked beyond that point.

Another point to remember -- just like whole wheat flour and brown rice, whole wheat pasta does not have the same shelf life as the more processed type. I like to keep my extra boxes in the freezer and won't use it if it smells the least rancid.

I cook a lot of whole grain pasta and this is how I cook it too.

I cook it longer than I do "ordinary" pasta and the texture seems not to be as gritty to me. If you experiment you may find a timing that makes it more pleasing to you.
