As Jen pointed out, all foods need some care when being served outdoors, but some sides seem to hold up better than others. Salad greens don't seem to withstand the heat very well either. If I'm going to a potluck picnic, I'll usually either make a marinated vegetable salad or a grain-based salad like taboulleh or quinoa with cilantro and black beans.

And, by the way, congratulations on your engagement! Enjoy the day!.

with all due respect with the mayo thing, i STILL WOULD NOT serve mayo based salads, or mayo based ANYTHING, for more than an hour, outside, chilled or not. if you want to replace it every 45 minutes, knock yourself out...

if not contained properly, and it NEEDS to be covered at all times!!! it will develope a gel-like substance around the edges... and eventually, over the top of the salad..yuck and gross!!

do you really want your friends and family eating that?

do with-out the mayo based salads and save the time for you and your friends and not worry about the food.

keep everything covered, hot and cold, replace when necessary, and enjoy your celebration.

....just my 2 cents...;)

My EXACT response was going to be WHO has all that freezer space, I am SO jealous... BUT, that is a GREAT idea, should one be able to pull it off. GRAND idea, honest, why didn't I think of this, so simple... Only hold-back would be the freezer space... Thanks much, even though I do not think I can make that happen.

Hi SarahW08 and Congratulations on your Engagement!!!

As already stated Mayo is not the culprit for causing growth of micro organisms that may cause illness.

With that said, I do think it is important for everyone to be comfortable and happy at such an occasion.

When I have outdoor parties during the Summer, I usually have a set up to keep the cold foods cold.

This is what I do....

I use various size baskets on the food table, and platters or bowls to fit the baskets as liners. About a week before the party, I fill 1 gallon or 2 gallon zip locs with water and place between the basket and the platter/bowl so that the ziploc molds to the fit of the platter on top of the basket.

Then place the this in a freezer until you are ready to use it.

I'm not sure if you can understand what I'm saying, but it works.

The only problem is that you have to have a big freezer to do this.

I just held a Graduation Party for 100+ at a local park..was worried about keeping things cold/hot too. Sterno Trays worked for the hot food (beans, hot dogs, sausage & peper, macaroni & cheese). We stayed away from salads -instead did carrot sticks, mini tomatoes, celery sticks, etc with dressings to dip into. The dressings I kept in their original bottles so people could see what kind they were and if they were regular or diet - all of which I sat in a pretty oblong tin with ICE in it. Instead of potato Salad - I served the Fancy (red bliss) potato chips. As hour dourves we had pita chips with humus and bruschetta with garlic toasts; and of course some pretzels for the kids.

Everyone loved it and had plenty to eat. Go with your parent's wishes - so they aren't worried for the entire party!

It doesn't matter whether Sarah's parents - who are the official host & hostess - are right or wrong.

What matters is that they are happy with the party plans. If certain menu items will make them happier, go with those!

Personally, I think salads with mayo in them TASTE better when cold, which can be hard to do on a hot summer day. Yes, you can refrigerate them until the last minute, set them in a chilled bowl, or hurry up & put them away after an hour, but why add the extra worry to the day? YOU may not think it's an extra worry, but if the hostess does....

I'm surprised so many people still think that mayonaisse makes food go bad.

That isn't true.

Hasn't been true since "the olden days"

Most foods will go bad from bacteria in and on it if it's held between 40 and 140 degrees. Mayo will actually make it last longer. So will other things with acid in them.

Mayo isn't the culprit.

"Commercial mayonnaise has an undeserved bad reputation as a cause of food spoilage. In fact, commercial mayonnaise is loaded with acid and preservatives that can actually extend the life of salads by killing bacteria. The eggs used in prepared mayonnaise are pasteurized to kill harmful bacteria. "

Most Kraft foods contain so many preservatives that they have left the state that we would call "natural" and become "artificial" food. So it usually can be eaten even if you leave it out in the desert all day.

I'd suggest making something using Velveeta as a base. Or perhaps Kraft Mac and Cheese served as a salad with some tasty add-ins like bacon bits or hot dogs.

I agree with humoring your parents on the no mayo, and it is always better to be safe than sorry. When we have family reunions, we have a refrig and all dariy stays in it until after the blessing and ir goes back in when the last person goes through the line. And it sits in a metal bowl full of ice.

Here are a few ideas.

oriental slaw
1 pkg Broccoli slaw
1/3 cup olive oil
1/3 cup rice vinegar, apple cider vinegar, or any other type
2 pkg beef ramen noodles
1/3 cup almonds &/or sunflower seeds
1 purple onion, diced
Break up noodles(set seasoning aside). Combine slaw, nuts, & onion. Mix beef seasoning, olive oil, and vinegar together. Pour over slaw mixture and toss until well coated. Refrigerate.

Baked beans or
squash, zuchinni, peppers, and onions tossed in some italian dressing and grilled in a foil pkg.

I recommend humoring your parents. While it sounds as if you are minimizing the risk of any mayo containing dish from "going bad", your parents are going to worry. I'm sure they are driving you nuts, but they really just want their little girl's big day to be perfect.

If you want to stick with the potato/pasta salad idea, some recipes you might consider are those that use oil instead of mayonnaise, such as:

The dishes would only be out for maybe one hour in a special tray that has ice in the bottom to keep things cool.

What does everyone think? I've been to outdoor parties and there have always been some dishes with mayo/dairy.
