I love this recipe, but it is a brunch bake! You lay thawed hashrown patties on the bottom on a 12 by 13 pan, and then put cooked crumbled sausage with onion. next add a can of drained roasted red bell peppers. Wisk a dozen eggs with 1 -8oz. cream cheese and pour over hashbrowns and sausage. Sprinkle with cheese Bake at 375 until golden brown. I have used any meat, no meat, different veggies and it works every time. I also like to serve it with sourcream and guacomole. This is in one of my pampered chef cook books! Enjoy!

i have one that is a family favorite..

6 eggo waffles not toasted
1 lb sausage (i used bob evans)
6 eggs beaten

take the waffles and cut them up in a greased pan, you can use pam spray, and if you are serving a large crowd, then use a 13x9 pan, and use 12 waffles, and up the eggs, but you can add a couple at a time, you dont have to use 12.. go by looks..

cook the sausage, drain out the grease

cover the waffles with the sausage, beat the eggs and pour over the waffles and the sausage.

bake 350 for about 30 minutes depending on size of pan, then put shredded cheese over top and put back in the oven and serve with syrup

What I also use for a fruit dip is vanilla jello pudding that comes in the little cup.

When I do my quiche they are never measured or alike. I just find what vegs I like and sauté in a skillet. Then I add or don't add meat that I want.

Along w/ the egg I add some sour cream to mine.

I would also serve some fresh fruit. You can serve it w/ a fruit dip. I cheat and mine is simple and easy. It is an 8 oz tub of cool whip. Then you have to get a cheap thing of regular yogurt. I use strawberry. Blend them together.

I think you can substitute cooked, crumbled sausage instead of bacon or ham in a recipe. When I make breakfast casseroles with sausage, I cook spicy sausage until it's nice and crumbly then drain it on paper towels to remove any excess fat. It loses a lot of its heat when mixed in with the eggs and cheese but gives it a bit of a punch.

I would also add some toast or English muffins to your options.

It sounds like a terrific brunch.

Here is a Bacon Quiche recipe from this site that I've made and is really good http://www.kraftfoods.com/kf/recipes/crustless-bacon-cheese-quiche-105213.aspx

Or here is a recipe from my grandmother that I love
Decrust and cube 10 slices of white bread
1 lb sharp cheddar cheese, grated
6 beaten eggs
1 qt milk
1 tsp dry mustard
1 tsp salt
1 lb bacon fried and crumbled (OR 1 lb bulk sausage, fried, drained, and crumbled)

Place bread in bottom of greased 9x13 pan. Sprinkle cheese over the bread. Mix eggs and milk together and pour over cheese. Sprinkle bacon/sausage on top. Let set over night or at least 4 hours. Bake at 350 for 45 min. Let sit for 5 minutes before slicing and serving.

The only thing I'd add to your menu is English Muffins or toast.

Looking for a sausage quiche recipe?

I am looking for a good sausage quiche recipe...does anyone have any suggestions? I am having some old neighbors over for a brunch type meal and I would like to make a veggie quiche and meat quiche..I already have the veggie one.

I was also going to serve a cheese and fruit tray with the quiches. Should I serve anything additional or are the quiches heavy enough?

This is for a meal this Saturday. Thanks everyone!
