Hello Kraft Community, we are very excited to share some great news with you. As loyal Kraft Community members we have heard your desire to do more fun things in the community and we are happy to announce in January 2010 we will be making some changes so you can connect and share food ideas in more ways than ever!
We want to let you know we will not be transferring the existing discussions to the new enhanced message boards so if there are discussions that you would like to save please make sure to either print them or copy and paste into a document that you can save to your personal files.
We will remind you again before the transition occurs but wanted to let you in on the exciting news!!

rhendley04's taco bar idea is wonderful. My aunt's husband is latino and he loves to make these things (not sure what he calls them) that are basically soft corn tortilla shells, filled with hamburger or sausage and potatoes, as well as any extras you like, like peppers or onions. Then they are deep-fried. Very bad for you but oh so good. lol

LOL. Amazing what we'll share on message boards.
When we're having a crowd we usually make mixed fajitas. Grill beef skirt, chicken breast or boneless thighs and maybe shrimp. All marinated in some kind of southwest seasoning. Then serve with all the trimmings like salsa, refried beans, guacamole, grilled veggies, shredded lettuce, tomatoes and cheese. Usually I just serve sides of rice and maybe beans, but it's a surprisingly easy buffet to put together.

We had a huge Mexican Fiesta in May and it turned out great. Some of the foods were as follows: Appetizers 7 Layer Dip Chips n Salsa/Queso Taco Dip Mini Meatballs Empanadas Nachos
Entrees: Mini Chicken Enchilladas Taco Meat w/ hard and soft shells (I cooked the meat and then put it in the crockpot to keep it warm) BBQ Chicken Fajitas (recipe on Kraft site) Cold Taco Salad
Sides: Refried Beans Taco Rice Tossed Salad
Desserts: This was a mixure as everyone brought desserts/sides or appetizers to add to the above menu.
We rented Margarita machines and had pina coladas and margaritas in colorful plastic margarita glasses for the adults. For the kids, I did non-alcoholic slushies in similar cups. Since the fajitas cook on the grill, I threw some hot dogs on for the kids (and adults) that didn't like Mexican food.
The nice thing about it was that 90% of the food could be prepared the night before.....as long as you have fridge space.

YOU COULD ALWAYS DO A "BUILD YOUR OWN TACO BAR" BY PROVIDING THE FIXINS TO MAKE TACOS, NACHOS, FAJITAS, OR BURRITOS AND ALLOW EVERYONE TO MAKE THEIR OWN.

I do to and when our sons where home I fixed tacos at least once a week, but that's about what it was, . Now I go to the restaurant and have a sopapilla or loaded nachos.
