One of my favorite web sites, The Pioneer Woman, has a TON of amazing recipes, especially if your man is a tried and true carnivore like her cowboy hubby.

there was a recent episode of barefoot contessa where ina made steak aupoa(sp?:|) match stick potatoes, and dessert was tarts with pastry cream and fresh berries. the coctail was real whisky sours made with fresh lemon and simple syrup. all of it looked really delish and aha, it was a suprise dinner for her husband.

You should make sure to create a special 'tini for the night. Does anyone else remember the Sandra Lee episode where she creates a white night sakitini for her sister Culleen?

Along the "pork tenderloin diane" route, I have made this many times--everyone I have made it for loves it. I serve this this with either stuffed bakes or wild rice and vegetable or salad--or whatever!

Lemon Caper Pork Medallions
1 pound pork tenderloin cut into 12 slices
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
1 tablespoon olive oil
1 cup chicken broth
1/4 cup white wine
1 clove garlic, minced
1 tablespoon capers, drained
1 tablespoon lemon juice
1/2 teaspoon rosemary, crushed

Flatten pork slices to 1/4 in thickness. In large resealable plastic bag, combine the flour, salt and pepper. Add pork, a few pieces at a time, and shake to coat. In large skillet over medium heat, cook pork in butter and oil in batches until juices run clear. Remove and keep warm. Add the broth, wine and garlic to the pan, stirring to loosen browned bits. Bring to a boil; cook until liquid is reduced by half. Stir in the capers, lemon juice and rosemary; heat through. Serve with pork.

If weather permitted, maybe some shiskabobs (I know I spelled it wrong) on the grill over a bed of rice.

Think about going to a restaraunt and what he would order. Maybe that is what you could make him.

Seafood Version (can be made using chicken also)

Ingredients
4 tablespoons EVOO - Extra Virgin Olive Oil, plus extra for drizzling, divided
2 medium red onions, thinly sliced
2 small bulbs fennel, fronds removed and discarded, bulb cored and thinly sliced
2 stalks celery, thinly sliced on a bias
2 bay leaves
3 cloves garlic, 2 thinly sliced, 1 peeled and left whole, divided
Salt and ground black pepper
1/2 cup fish stock or clam juice
1/2 cup white wine
1 28-ounce can whole tomatoes
1 pound large shrimp, peeled and deveined, tails removed
8 slices prosciutto
8 cod filets (about 4 ounces each), skin removed
1 loaf ciabatta, split in half lengthwise and cut into four chunks
2 tablespoons tarragon, chopped
2 tablespoons basil, chopped
2 tablespoons flat-leaf parsley, chopped
1/4 cup balsamic drizzle (optional)

Balsamic Drizzle - Make a big batch and keep it in the fridge for anytime you want to use it.

Ingredients
1 cup balsamic vinegar
2 tablespoons brown sugar

Preparation
Combine vinegar and sugar in a small pot over medium-high heat and bring up to a bubble. Reduce the heat to medium and cook the liquids until they've reduced by about half and are thick and syrupy, about 10 minutes.

Preparation
Preheat oven to 375 F.
Place a large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Add the onion, fennel, celery, bay leaves and sliced garlic to the pan, and season with salt and pepper. Cook the veggies until tender, about 5 minutes. Add the fish stock (or clam juice) and white wine to the pan and cook until reduced, about 3 minutes. Add the tomatoes and bring to a bubble.
Meanwhile, place another large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Spread the 8 pieces of prosciutto out on the counter and place one cod filet on each piece. Season the fish filets with salt, pepper and a tiny drizzle of EVOO then roll the fish up in the prosciutto.
Place the wrapped filets into the hot pan seam side down and cook until golden brown, about 3 minutes per side. Transfer the fish to the oven until cooked through, about 5 minutes more.
At the same time that the fish goes into the oven, toss in the loaf of ciabatta to toast it. When the ciabatta comes out of the oven, rub the cut sides with the clove of garlic and drizzle them lightly with EVOO.
When the fish is just about done, drop the shrimp into the pot with the tomatoes and veggies, and simmer until the shrimp are pink, about 2 minutes. Remove pan from heat, discard the bay leaves and stir in the herbs.
To serve, lay a piece of toasted bread down into each bowl and top each with a couple of scoops of veggie stew. Lay two cod filets onto each plate and drizzle with some of the balsamic drizzle, if using.

I made the Pork Tenderloin Diane......

except I had to use center cut boneless pork chops, because the only pork tenderloin's at the grocery were seasoned (like bar-b-q or peppercorn), there were no "Unseasoned" pork tenderloins.

It was Yummy!!! Definitely a keeper and doesn't take very long to make, at all!!

My family loved it too!!

This is really easy and tastes like you spent a long time making it:

PORK TENDERLOIN DIANE

2 pounds pork tenderloin
2 tsp. lemon pepper
2 tbsp. butter
2 tbsp. lemon juice
1 tbsp. Worcestershire sauce
1 tsp. Dijon style mustard
1 tbsp. minced parsley or chives

Slice the tenderloin into about 1 inch thick medallions. [You can slice them thinner if you want them to cook faster.]
Sprinkle surfaces of medallions with lemon pepper.
Heat butter in heavy skillet, cook tenderloin medallions 3 to 4 minutes on each side.
Remove medallions to serving platter, keep warm.
Add lemon juice, Worcestershire sauce and mustard to skillet.
Cook, stirring with pan juices, until heated through.
Pour sauce over medallions, sprinkle with parsley and serve.

Serves 4.
Add his favorite veggie and a baked potato, rice or whatever and it's all good...

I believe the original poster was looking for ideas for a SPECIAL DINNER. Yours look good but probably better suited for a Superbowl Party or something.

I'd suggest a shrimp or lobster cocktail followed by a nice steak, baked potato, crisp salad and a decadent dessert.

One of my favorite things to make (which happens to be my husbands favorite thing to eat : ) is Tex-Mex Lasagna. It is absolutely delicious! A lot of times I will make it when I have the time and will refrigerate it for a day or two (it always tastes better after a day or so) or freeze it until I am ready to eat it.

One other dish that is very tasty (and easy, too!) is Salsa Chicken. I make this quite a bit because it is so easy but has a wonderful flavor.

My hubby loves what we can South Western Chicken. Cook boneless skinless chicken breasts in oven, once done, top with bbq sauce, cooked bacon, and some shredded cheese (if you want spicy add pepper jack). My hubby likes it when I add a slice of tomato under the cheese. (i'm not crazy about it). Then maybe some oven roasted potatoes: Wash some potatoes, and you can either leave the peeling on or remove. Cube them, then mix a pkg of Lipton Onion Soup mix(generic works fine,too), and 1/3 cup of olive oil. Put potatoes in oven safe dish and pour mixture over and toss the potatoes in it. Bake 350 until tender. Add a nice salad, maybe some green beans, and some yeast rolls with honey butter.
End with either his favorite birthday cake or favorite dessert.

Decorate the table and set the theme. My hubby loves Blues music, so I always put on a Blues CD,and make it nice for him.
