I love to make cream cheese roll ups:

Soft flour tortillas
Shredded cheese
Whipped cream cheese (it spreads better)
Salsa

Mix shredded cheese, whipped cream cheese and salsa to taste. Spread on flour tortilla. Roll up and refriderate for 2 hours or overnight (covered). Slice in pieces and serve with salsa for dipping. They are always a huge hit and very inexpensive.

Um, no. Not that meatballs are a health food, but potted meat like spam or other tinned meat is high in sodium even if it tends to be lower in fat. With the incidence rates of hypertension in the US what they are, you are better off using a very lean ground beef (like sirloin) are draining it well and seasoning it yourself. The average sodium intake in the US is 2-3x the recommended.

What is potted meat? I didn't know that there was a drug problem in the animal world!

This is so much easier if you use potted meat instead of meatballs. You can then spread it on crackers. Potted meat is cheaper, too. And better for oyu.

I bet this would also be good with meatballs. I love sweet & sour meatballs!

i posted this on "college girl needs help" this is yum and easy.....
QUICK BRUCHETTA

-one loaf french baguette sliced into 1/2 inch slices
- jar of basil pesto
-jar of roasted red peppers sliced into thin strips
-log of herbed goat cheese

spread pesto over bread slices, top with peppers and cheese and bake at 350 until bread is toasted and cheese is melted.

Fiesta Pinwheels

8 oz softened cream cheese
8 oz. shredded cheddar cheese
1 package taco seasoning
1 package flour tortillas
1 jar salsa

Mix cream cheese, cheddar cheese and taco seasoning together. Spread on tortillas and roll up jelly roll style. Refrigerate for at least an hour then slice into 1/2 rounds. Serve with salsa for dipping.

Oh, reading that lil' smokies recipe reminded me...when my grandmother fixes the recipe using lil' smokies, she adds a can of crushed pineapple to give it a sweet and sour taste.

To be really economical, you can also use sliced hot dogs with the same sauce.

It looks like you copied that from Lottie's recipe but used meatballs instead of lil' smokies.

how about Pillow Dogs?
1 pack miniature beef cocktail wieners
1 (16-ounce) container buttermilk biscuit dough
1 cup shredded sharp Cheddar
Mustard, optional topping

Preheat oven to 375 degrees F.
In a grill pan on medium heat, cook cocktail wieners until plump, about 5 minutes. Cook in 2 batches. Set aside.

On a clean surface, cut 4 large biscuits into sixths. Dump cheese into bowl and roll each slice of dough in the cheese to make little cheese balls. Gently stretch each ball to fit a mini hot dog. Wrap the dough around the mini dogs. Arrange pillow dogs on a sheet pan lined with parchment paper. Leave about 1-inch space between each roll. Bake for 10 minutes. Garnish with mustard, or desired topping.
