Thanks for the informational link on honey crystallization - very interesting!
Putting the honey through a very fine filter after heating, as you suggested is something that some companies do to prevent crystallization, according to the link.

Considering what I purchased is processed commercial honey, I would think it's already been subjected to this treatment, should I be zapping it over & over each time w/the microwave? Am I going to mess it up even more?

I've always just popped mine into the microwave before using when it gets hard. A few seconds is usually all it takes to thin it out for use.

The hardening & cloudy appearance is due to crystalization of the sugars. If you can store the honey is a warm area- it will help to prevent this. However, you can slow the process by removing loose crystals from the honey (once crystalization starts- it spreads rapidly). Here is link that talks about how to remove them via straining.

Honey that has hardened

I purchased a warehouse sized 2.5 lb. squeeze bottle of honey, and refill my smaller container with it. After a few months, it's become hardened and cloudy, so I set it in a pan of really hot water last week, and now it's hardened again. How should I liquify the honey so it stays that way?
