As loyal Kraft Community members we have heard your desire to do more fun things in the community and we are happy to announce in January 2010 we will be making some changes so you can connect and share food ideas in more ways than ever!
We want to let you know we will not be transferring the existing discussions to the new enhanced message boards so if there are discussions that you would like to save please make sure to either print them or copy and paste into a document that you can save to your personal files.

When I was growing up, we weren't EVER allowed to read at the table. If I find myself eating alone, I usually indulge in that guilty pleasure.

May I suggest that if you find yourself alone for a meal or meal(s), you might want to "fancy it up", just for yourself, maybe a special table setting or a candle or a special CD or movie or TV show, whatever... OR, how about having your own picnic, even in your own backyard... I know, I know, sounds way to whacked or a silly waste of time but, might give it a go and find that MAYBE, it makes it a nice time for yourself, all by yourself. WHO says that you have to spend all your time with ANYONE else? Just thinking out loud....

I can totally sympathize with finding it hard to cook for one. Small outdoor grills or George Forman types can quickly cook a chicken breast or small piece of salmon along with veggies. If you have a specialty meat market, they are much more likely to have single portions available.
For me, it's not the cooking for one, but the eating alone that I find difficult.

How about cathyv's idea of cooking what you like as a regular sized meal, maybe even bigger, and sharing it with a family member, neighbor, co-worker, whatever. I find myself doing that all the time. I don't even realize as I'm making something that I built into the plan having enough to share. I am always "making a plate" for my neighbor or taking a container to a friend at work. It keeps it interesting and it's always appreciated. Here's a tip however, careful of the containers you pack it up in, you may never see them again. Learned THAT the hard way.

Cbsandberg, welcome to the Message Boards.
I know exactly what you are talking about. I hate cooking for just myself. One problem is that I have a real block on making just a little food... I usually have enough to feed a large family with teenage boys. 
I do take advantage of being able to cook things that my husband doesn't like or isn't willing to try. I will cook things like a piece of beef or a chicken that I can use the leftovers to make different meals later in the week. I love Thai Curry and that is easy and fast to put together. I am starting to experiment with Mexican foods and so far I find them easy and fast to put together. The "Healthy Living" (at the top of the page) has a "Meal and Fitness Planner" with some great recipes for one person.

When I was single, I loved cooking just for myself. I was able to cook whatever I wanted. I encourage you to do this. It can be very therapeutic.
I also loved cooking big meals and sharing with my neighbors and friends, especially when I wanted something that you had to make big.... like Tetrazini.... you can't make that for one person. People love to receive homemade food. Share your talents!!

I have found myself in the same situation. My diet is the same as yours. What ever is quick and easy. Cooking and freezing doesn't work because I don't end up eating what I freeze. I buy groceries and it seems that I'm throwing food away. It's hard to shop and cook for one. I also agree with needing inspiration and helpful ideas.

My husband has not had much > appetite ever since we got married.
Mine likes to bring home a bucket of KFC ( no napkins ) and a 6 pack and sit in front of the T.V. all night. If not KFC, he'll bring home hot wings from our local deli or a pepperoni pizza. Aside from his expanding belly, I have grease stains all over my living room Lazy-Boy. Plus, it smells like chicken!! What's a girl to do?!

I very often end up cooking for just one even though i have a husband and a few kids. They often eat at friend's homes or go out. My husband has not had much appetite ever since we got married.
I love the healthy recipes here. They are easy to make and figure friendly. Try them. I ahve made a number of them and they are very delicious. Sometimes I just pick up a frozen dinner and microwave it. I like appetizers and often make a meal of those. There is no end to what can be done with Ritz crackers and cream cheese. I eat very well even when I am all alone.

that is a great idea too, although she may get tired of the same old casserole piling up freezer burn. maybe when she made these larger size portions, while dividing them up, add something different to each serving.
i also liked crazys post. good idea. i just hope she has enough $$ to cover any possible disaster. lord knows i have many of them...lol it sounds like she knows what she is doing. she has cooked for a family, so, im sure that she will come up some great ideas!

I would take this opportunity to be creative in cooking. The only critic you will have is yourself. If you have a disaster then who cares.

Rather than thinking of it as work, try to look at it as treating yourself well. It's much healthier to cook yourself a good meal than eat fast food. Remember that you deserve to eat well and be healthy even though it's just you eating.
Try making large meals and then freezing the leftovers into individual re-heat portions. Make several chicken breasts and then freeze them seperately. Pop one into the microwave to reheat while you cook some quick cooking rice or couscous and steam a veggie.

i like to buy in bulk, and re package it into single or 2 person servings. for instance, i buy a log of sausage, and cut it up into single serving, or in my case, 2 serving portions. bag it and freeze it. you can do this with meats, veggies, just about anything. if you can afford it, get a food saver machine. we lost my dad about 6 years ago, and i showed my mom this technique and she still cooks for herself from scratch. just remember this, single portions freeze well. hope this helps. good luck!! by the way, WELCOME TO THE BOARDS!!!!!!! hope we hear lots from you in the future!!
