I agree with Jen, especially with the pasta salad. Here is an interesting potato salad using French dressing: http://www.kraftfoods.com/kf/recipes/russian-potato-salad-50583.aspx
For my pasta salads, I mix chopped veggies, cooked pasta and Good Seasons Garlic & Herb dressing I make up with olive oil. I usually add chopped fresh basil as well. For a special pasta salad, I'll add cooked tortellini or ravioli to the penne.

you can try a german potato salad and any vinegrette based pasta salad.

Yes, if the heat is too high, you will scramble the eggs so you will need to watch it.

Vermyn is right.
That recipe is a mayo based creation. And cooking eggs over that heat will give you scrambled eggs. Not quite what potato salad calls for. You can hard boil some, if that pleases you, and dice it in, but I get the feeling that THAT won't float his boat, either.
Just toss cooked pots(mini reds or yukons) in some red wine vinegar and veg oil. Throw in some fresh snipped chives and S&P, and some julienned red onion.
Done.

2 things.
The first is that this is basically a recipe for mayo. Mayo is just eggs, oil, vinegar and salt. And often mustard.
So it might not work if he really hates mayo that much.
Second, the eggs will cook -- scramble -- over medium heat. Are the eggs supposed to be cooked?

I am the same way. I found this recipe for potato salad in an old family cook book.
In a pan, whisk the following: 5 eggs 1 stick butter or margarine 1/4 c vinegar (scant) 1/2 c sugar 1/4 tsp salt 1 tsp mustard (yellow or dijon) Over medium heat, whisk until thick. Add to diced boiled potatoes. You may also add crumbled bacon, chives, boiled eggs (sliced or cubed). or other items to your potato salad. Enjoy!!
As for pasta salad recipes, try a creamy ranch or just an italian dressing. Then go wild with other ingredients: frozen peas, sliced black olives, pepperoni/salami pieces, diced celery, broccoli, cheese cubes, green/red pepper, etc.

I don't care for mayo either. I substitute sour cream and plain yougurt for mayo in recipes.

My husband does not like Mayo or Miracle Whip. Many recipies call for this and even if he doesn't know it is in there... he won't eat. I am looking for a good potato salad recipie and cold pasta salad recipie that is not too difficult and that does not have the mayo. Thank you!!!
