I accidently picked up a "fryer" instead of a "roaster" at the store yesterday. Will it make that much difference if I am doing it in the crockpot?

I've only used a whole roaster. I season it with salt, pepper & rosemary, put it in the pot with about a cup of white wine, and cook on high for 6 hours. Can't be easier.

I have boneless, skinless, chicken breasts, could this "recipe" work for them as well as it did for a whole roaster?

I fixed this chicken tonight for dinner. It worked great except mine was not done in four hours but took about six. Probably because slow cookers and chicken size vary so much.
It was very good and tender and I was at least as good as any deli chicken I've purchased at about 2/3 the price.
It was really good. My husband hates dry chicken and I think he would have eaten the whole thing if he hadn't had to share.
We have a huge rosemary bush, next time I think I'll lay the chicken on a layer of rosemary stems.

Funny---I'm making a chicken in the crock pot as I post this...
Take one whole chicken--removed of giblets, etc. I remove a lot of the fat from around the neck and "tail" section. rinse and pat dry. I do a dry rub of 1tbls garlic powder, paprika, pepper, oregano and bit of salt and cayenne.
Spray the inside of the crock pot with non-stick spray and put the whole chicken in breast side down.
cook on low for about 4 hours or so (depends on the size of the chicken and your crock pot)....
This "slow roasted chicken" turns out juicy and smells wonderful all afternoon!

I have tried 2 new crockpot chicken recipes in the last week (chicken chowder and chicken with herbs and veggies) and both turned out great. One used boneless chicken breasts and one used a cut up chicken; neither method resulted in dry chicken. I will be trying another tomorrow night, chicken stroganoff.
Chicken Chowder
1lb b/s chicken breasts 1/2c frozen peas 1c frozen corn 1/2c diced carrot 2tsp cumin salt/pepper to taste 2 14-1/2 oz cans chicken broth 8 oz sour cream 3Tbsp flour 1small zucchini, diced shredded mexican cheese
Place first 7 ingred in crockpot, cook on low 6-7 hours. Turn crockpot to high, remove chicken. Mix sour cream and flour together, whisk into chowder and add zucchini. Cook on high 20 minutes. Meanwhile, dice or shred chicken breasts and cover to keep warm. Sitr back into soup after the 20 minutes and serve topped with cheese.

whisk together a can of jellied cranberry sauce and 1 packet of dry onion soup mix and spread over chicken breasts and cook on low about 6 hours or so. We usually have it with a wild rice blend It is DELICIOUS!!!

Chicken breasts cooked in a crockpot always come out very,very dry.
It's not a good way to cook them.
If you do, make sure you cook them till they are disintegrated.

Made this using a 1 1/2 qt. Crockpot. Put in 4 Chicken Breast, added 3/4 c water, Lemon Pepper and Garlic & cooked about 8 hrs. It literally falls apart. Add Kraft B.B.Q. sauce and made BBQ Chicken. Was great. Hubby says this only way he wants BBQ Chicken again.

Stuffed Veggie Chicken 1 Med. chicken cleaned and inside salted, dice up potatoes, onions, carrots and celery and stuff the chicken. If you have ties -tie up the legs and wings, put in slow cooker with about 1-2 cups chicken stock, cook all day on low or at least 6 hours on high until chicken is done. I sometimes add some seasoning also on the outside of the chicken.

Instead of using water and bouillon cubes you could use 1 can of low sodium chicken broth per package of dressing mix.
I use this chicken to make a casserole. I cook any kind of noodles and some broccoli. I shred the chicken while these are cooking. I transfer the juice from the crockpot to a pot on the stove, add some starch this thicken it up and mix everything together in one big pot.
This is my family's favorite chicken dish and it's so easy.

SUPER EASY CROCKPOT CHICKEN
4-5 FROZEN skinless, boneless chicken breasts 1 Pkg. dry italian dressing mix 2 cups water 2 chicken bouillon cubes
Place water & bouillon cubes in slow cooker. Sprinkle top of eash FROZEN breast with dry dressing mix & place in slow cooker. Cook on low for 8-10 hours.
This recipe takes less than 5 minutes to prepare. It is honestly the easiest recipe I use & the chicken is never dry.

Chicken breasts totally dry out in the crockpot, so make sure you use a lot of cream soup or cream cheese so that the dry meat is moistened by a thick sauce.

I do something similar to this, but I add my cream of soup at the beginning along with a little chicken broth.
