Hello Kraft Community, we are very excited to share some great news with you. As loyal Kraft Community members we have heard your desire to do more fun things in the community and we are happy to announce in January 2010 we will be making some changes so you can connect and share food ideas in more ways than ever!
We want to let you know we will not be transferring the existing discussions to the new enhanced message boards so if there are discussions that you would like to save please make sure to either print them or copy and paste into a document that you can save to your personal files.

I don't usually use my microwave to cook a whole meal, but tonight I was a little tired and pressed for time. I made a cheesy chicken broccoli and potato casserole.
3 potatoes 1 bag birdseye broc & cheese sauce(the kind that steams in the bag) 1 grilled chicken breast sliced salt, pepper, garlic shredded cheddar cheese
Cut potatoes into 1/4 inch thick slices. Layer into bottom of microwaveable casserole dish sprayed with cooking spray. Season with salt, pepper and garlic powder. Microwave 5 minutes. Stir and microwave 5 additional minutes. Potatoes should be soft. Remove casserole and cook bag of broc and cheese sauce per directions. Stir together potatoes and broccoli. Top with shredded cheese to your preference. (We are trying to be health conscious, so I just used a little) Layer sliced grilled chicken on top(I cooked mine on george foreman grill, but you can buy grilled chicken strips or even use leftover rotisserie) Top with another layer of cheese and zap until warmed through and cheese is melted. Serve along side a nice tossed salad. Enjoy

Italian Beef
Large Beef Roast, fat removed 1 pkg Zesty Italian Salad Dressing Mix 1 warm can of beer ½ onion, fine chopped 7-8 pepperchinis, fine chopped
Cut beef into large pieces. Sprinkle seasoning over the roast. Add the onion and pepperchinis. Then pour the beer over the top. You need to allow this to cook for aprox 6-8 hrs. Do not take the lid off repeatedly. It takes longer for it to cook. When it is ready the meat will easily pull apart.

I totally agree with hjmans about microwaving scrambled eggs. Just remember that they will continue to cook for a minute or so, so don't overcook. You can also easily cook bacon in the microwave. We use paper plates to make clean up easier. Just take a paper plate, cover with a couple of paper towels with one to go on top (white only) and lay a few strips of bacon on the paper towels and wrap the top one over top and tuck in. Cook for about three minutes for 4 slices, but this will vary a lot depending on the bacon.

I know this probably isn't much help, but alot of boxed side dishes (like Rice-A-Roni) have instructions on the box for microwave preperation.
Heres one that I find a lot of people don't know.. you can make scrambled eggs in your microwave. Spray a microwave safe bowl with non-stick cooking spray. Put a few eggs in (I've never tried this with alot of eggs, usually just 2 or 3) and scramble. Pop in the microwave for a minute, and scramble again. Just keep doing that until they're to the desired 'doneness.' You can put veggies, cheese, ham, whatever in with it.
Not a big crock pot chef, don't know why, just never got into it much further than dips.

I have a terrific and easy crock pot chicken recipe for you.
4 Boneless Chicken Breast 1/2 c Water 1 8 oz. Cream Cheese 1 can Cream of Mushroom Soup 1 small jar of mushrooms Noodles,Mashed Potatoes or Rice Serves 6
Cut 4 boneless chicken breast in bite size pieces, place in crock pot with 1/2 cup of water on low for 1 hour. Now add 1 8 oz. cream cheese, 1 can of cream of mushroom soup,1 jar of mushrooms and cook on low for 3 hours. Delicious over noodles,mashed potatoes or rice.

Welcome to the community, BarrYkw. You certainly have a cooking challenge. A few years ago when my kitchen was being rebuilt I was limited to a microwave, slow cooker and grill. If you have the ability, a small gas or charcoal grill can help you with a nice balance in your meal planning.
