Other than the salsa and sour cream, this looks almost exactly like my chicken and rice slow cooker recipe. I see a lot of instructions that say to put the rice in closer to the end of the cooking process, but I've never had any problems putting my rice in right away. It's a lot more starchy and sticky than if you added it later, but it's very edible and very good.

Here's how I make a slow cooker Mexican flavored chicken stew:
Place two cans of drained black beans and a can of drained corn in the bottom of your crockpot. Add 1-2 teaspoons of cumin seeds and top with 1/2 jar of Black bean salsa (I've also used plain or chipolte peach (?) salsa). Then add a package of chicken thighs or breasts (skinless and boneless or just skins removed) and top with remaining salsa. I've used frozen chicken, partially thawed or thawed in this dish and it all works but cooking times will vary.
My slow cooker cooks hot, so it only takes about 4 hours in mine, but depending on your cooker, it could take 7 or 8 hours.
Just separate the chicken with a fork and remove any bones if necessary. Serve over rice and top with grated cheese and more salsa if you want.

i did this on sat when my dh returned home after 2 months... 1 HUGE chx breast 1 can diced toms, drained 1/2 can black beans\ 1 small onion, sliced 1/2 red bell pepper 1/2 green bell pepper 1/2 can black olives 1 big clove minced garlic 1 packet fajita seasoning. cooked on low for about 7 hours
it was ready when we got home from the airport!!!
we had that with ww pita bread, low fat sour cream and 2% cheddar... we munched on it all day sat...

Put all ingredients in slow cooker EXCEPT for rice & sour cream Cook on low 6-8 hours Shred chicken and serve over rice, with sprinkle of cheese, some of the salsa/broth/corn mixture and a dollop (sp?) of sour cream
SO DELICIOUS!! enjoy
p.s. I ended up having some extra chicken left over so we used it the next night for tacos, along with beef tacos too (my kids like chicken tacos better than beef)

I couldn't decide between the cream of onion or the cheddar cheese, so I put both soups in. I was afraid it would be too soupy, so I added a couple cups of already cooked rice.

I make a meal similar to this once a week. I combine beef, nacho cheese soup, cream of chicken, and a jar of either salsa or taco sauce. Everyone loves it.

I agree, sounds yummy.....I might use as a topping for nachos (my favorite Mexican dish), topped with shredded lettuce, diced tomatoes, and guacamole. I might even throw in a can of black beans and a cup of frozen corn, and cut out some of the meat. Thanks for the idea, I will put on the menu for next week's hockey night!
