Carebear, I make something similar to this couple of times a week. It goes great with my chili omelets.

My family always uses this recipe for big family gatherings it is super easy and DELICIOUS, I actually recieved the recipe from a friend and have used it ever since. If I am having a lot of guests I often double it.
2 pound bag of hashbrowns 1 pint of sour cream 1 can cream of chicken soup 1 can fiesta nacho soup 2 cups of shredded cheddar cheese salt and pepper to taste optional chopped onion
Mix together in crockpot and heat for about 4 hours on low

You can do red potatoes in the slowcookerwith a little water in the bottom for steaming. Add olive oil to cubed potatoes and seasonings like rosemary, thyme, dill, garlic, etc. to your taste. Place on low and let them steam. They look nice also.

I love to cook and try new things with the family. Here is one of their favorites and it is so easy. For bigger gatherings just multiply. 6-8 potatoes large cubes 1 can of cream of onion soup 1 can of creamy cheese soup/fiesta 1/2 cup water 1 onion chopped 1 tbl of parsley small jar of pimiento, drain 1/2 tsp salt 1/4 tsp pepper Mix all together. Place in slow cooker on warm - if for evening meal. Place on low for afternoon meal. Just keep an eye on it so the edges don't get too brown (potatoes should not be overcooked). I also sprinkle with cheese on top. Enjoy and good luck.

Try this recipe from AllRecipe. It has very good ratings (almost 5 star from almost 450 people).
Hope you find a recipe that works for you! You can also try this recipe for make-ahead mashed potatoes.
Happy Thanksgiving.

My aunt who is NOT a cook found this recipe and now it is "her" dish that she brings to every family function:
Potato Hot Dish 2 pound bag hash browns (southern style) 1 teaspoon salt 1-1/2 teaspoon pepper 1 pint sour cream - 16oz 2 cups grated cheese 1/2 stick oleo 2 tablespoons onion chopped 1 can cream of chicken soup Mix all ingredients in a casserole dish. Bake at 350 degrees for 2 hours and 15 minutes The last few minutes I put more shredded cheese on the top to make it a little cheesier . Or place in greased crockpot and cook on low 4 hours until hot.

Hi, I need a potato recipe for the slow cooker. We're hosting a New Years Eve Dinner party, there won't be any room in the oven or on the stove for potatoes. Main Course - Prime Rib and Crab Legs. Any suggestions would be helpful?
