So many of these suggestions sound fantastic. I have a question though: when all of you are using chicken or pork chops in the slow cooker, are you using boneless? I have trouble every time I use boneless with them tasting dry (despite making sure there is plenty of sauce). My roasts turn out great, but I have trouble with breasts or chops. Any suggestions? It's just that if I'm making something last minute, boneless is what I usually have on hand in the freezer.
Thanks!!!

My favorite is Salsa Chicken. Just put chicken breasts (defrosted) in crock pot and pour a jar of salsa over them. Cook on high 3-4 hours or you can do low 6-8. Near the end of the cooking time I top them with shredded cheese. I serve the chicken over rice with the salsa and cheese. It sounds a bit weird, but it's just chicken with a tomato-based sauce and veggies. No cream sauce. We love this one and it's only four ingredients! I'm also on Weight Watchers and if you use reduced-fat cheese it is low points

You can sub any type of soup for the "cream of" types. My favorite is chicken breasts with 2 cans of chicken and stars soup and 2 cans od green beans! YUMMM

You can take most any recipe you cook in the oven or slow cook on the stove and adjust it for your slow cooker. Beef roast, stew, chili, swiss steak, all kinds of chicken dishes. Don't add as much liquid as most call for. The liquid doesn't evaporate in a slow cooker. You can make your on soup the way you like it. I rarely use canned soup in the slow cooker. I do use broth to add rich flavor. good luck.

Crockpot Burgundy Beef
2 pounds beef stew meat (1" cubes) 1-2 large onions, sliced 3 cloves garlic, minced 1 cup ketchup 2 tablespoons worcestershire sauce 2 tablespoons brown sugar 2 teaspoons salt 2 teaspoons paprika 1/2 teaspoon dry mustard 1/2 cup water 1 cup burgundy wine 1 pound mushrooms, sliced 1 green pepper, sliced/chunk 1 teaspoon Emerils seasoned salt
Mix all in crock pot. Cook on low 8 hours. Thicken with some flour if desired. We serve this over rice or noodles. I have also added sliced carrots to this.

Try making a pork roast with a can of cranberries (whole or sauce) and a package of onion soup mix. Sounds gross, but really is excellent. My kids (4 and 1) love it, and it's so easy. I throw it all in the crock in the morning and keep it on low all day. If the roast is frozen, it works best. Otherwise put in about a cup of water.
