Try this one:
Stuffed Peppers (Easy) 4 large green bell peppers, tops removed, cleaned of seeds and cored 1 lb extra-lean ground beef 8-oz can tomato sauce, divided 15-oz can Spanish rice (or just use cooked rice, some taco seasoning and a little salsa or tomato sauce) 1 large onion, chopped 1/2 tsp salt 1/4 tsp black pepper
Prepare green peppers. Combine remaining ingredients (1/2 the tomato sauce) and stuff peppers full with the mixture. Place stuffed peppers in slow cooker. Pour remaining tomato sauce over peppers. Cover & cook on high 4 hours or on low 8 hours.

Hi, I don't have a recipe just for cabbage rolls or stuffed peppers, I use my meat loaf recipe and add cooked rice in the amount for the bread or cracker crumbs. If it dosen't look like as much as I want, I just add a little more rice. Lots of luck .

I cook stuffed peppers in the crock pot for the 6-8 hours on low. I do preboil the rice but not the peppers. I cut the tops off, clean out the peppers and add the meat mixture--ground beef, onion egg, rice, s&p, and I add a can of whole kernal corn. It makes the peppers a little sweet and my family loved it. If I make them in the oven I cook them at 350 for about an hour. I almost forgot I use a can of tomato soup for the sauce.

I don't precook the peppers or the rice if I'm cooking them in the crock pot. But for the oven, I do precook the rice. I also cut the tops off the peppers, remove the seeds and cook them for about 6 minutes in boiling water, then drain and stuff them. Place in a 9x13 baking dish, add about 1/2 cup water to pan, cover with foil and bake at 350 degrees for about 45 minutes.

Hi I wanted to know how long would you leave the peppers in the oven rather than the crock pot. Should you cook the rice first and should you cook it all the way till it's done and then put it in the peppers.
Thanks much shari236

They are in the crock pot at home as we speak....I will let you know how they were. I used a recipe from about.com, but I plan to experiment with some of the suggestions here in the future. I never thought of using my meatloaf recipe--and I make goooooood meatloaf!

Hi lauradewoody, This is an ideal. do you have a "favorite Meat loaf" recipe? If so, just mix it up, add some cooked rice, about 1/2 c. per lb. of hambuger. stuff your peppers, put in the crock pot , cover with tomatoe juice, or tomatoe soup mixed 1/2 with water and cook at least 4 hrs. on high and 6 on low. Lots of luck.

Yes, the crock pot is a great way to make stuffed peppers.
Gianna’s Slow Cooker Italian Stuffed Peppers
1 lb. ground beef 1 cup uncooked white rice 8 oz. mozzarella cheese, cut into 1/4 inch cubes 1 small onion, diced 1 tsp. salt 1/2 tsp. pepper 1 tsp. minced fresh parsley 2 cloves garlic, minced 6 large red bell peppers, tops cut off and hollowed out 32-oz. can crushed tomatoes 11/2 cups beef broth 1/2 cup grated Parmesan cheese
Mix together first 8 ingredients in bowl. Spoon mixture into peppers, filling about 3/4 of the way. (Discard pepper tops.) Place stuffed peppers into 5-quart slow cooker. Pour crushed tomatoes over peppers, then pour beef broth around the sides. Cover and cook on low for 6 to 8 hours. Top with Parmesan cheese before serving.
Crockpot Peppers
6 large green bell peppers 1 lb ground beef 1 cup rice, uncooked 1 onion, chopped 1 carrot, shredded 1 tsp beef bouillon 1/2 tsp salt 1/2 tsp pepper 1 can tomato sauce, tomato soup, or spaghetti sauce 1 cup water
Remove top and seeds from peppers. Combine beef, rice, onion, carrot, bouillon, salt and pepper. (Add any other seasonings you like, such as oregano, parsley, garlic powder, etc.) Fill each pepper about 2/3 full and place in crockpot. Combine sauce and water and pour over peppers. Cook on low for 6-8 hours.
Spicy Stuffed Peppers 4 green peppers, tops and seeds removed 1 lb ground beef 1 cup finely chopped onion 1/2 cup cooked rice 1 teaspoon celery salt 1/2 teaspoon salt 1/4 teaspoon pepper Dash cayenne pepper 1/2 cup water 1 jar (8 ounces) picante sauce Combine ground beef, onion, rice and seasonings; spoon into peppers. Pour water into crock pot, then add peppers. Pour picante sauce over peppers. Cook on low for 6-8 hours.

If you search "stuffed bell peppers in the crock pot" online a bunch of recipes come up--all pretty basic to the ones you make in an oven. The only question I have is they say to cook for 8-10 hours on low--I would think the peppers would get really mushy. When I make them in the oven, we do not like the peppers really soft.
