Hello Kraft Community, we are very excited to share some great news with you. As loyal Kraft Community members we have heard your desire to do more fun things in the community and we are happy to announce in January 2010 we will be making some changes so you can connect and share food ideas in more ways than ever!
We want to let you know we will not be transferring the existing discussions to the new enhanced message boards so if there are discussions that you would like to save please make sure to either print them or copy and paste into a document that you can save to your personal files.

i don't have any experience with velveeta - i grew up in an Italian household and didn't even know it existed til i went away to college - my first roommate would sometimes receive it in her care packages from home and would just cut a big hunk and eat it !!!! it sorta grossed me out but to each his own i guess . . . i agree with the other posters who suggest making a roux of butter and flour then adding some milk and then shredded cheddar

I use no fat powered milk with enough water to make it the consistancy I need along with shredded 2% cheddar. It works GREAT.....The no fat powered milk can also be used as a sub for cream. Great in gravies and soups. Just play with the amount of water. I made the best cheesy broccoli soup EVER when I used this tip from my very heart healthy sis.

Mmmmm Velveeeeeetaaaaaa I use it in my baked Mac & cheese along with several other real cheeses, also for Queso dips, etc. It's good for creaminess but I wouldn't use it just by itself. I used to love to eat it though when my Grandma would chop it up to use in dips... LOL

you absolutely right about that one!! especially people with high cholesterol and such. should also avoid margarine... notice how it never goes bad in the fridge like velveeta? i love the stuff, but use it sparingly. back to the subject, make a roux and try using shredded american cheese. i like to use cheddar, but like someone else said, it tends to get really greasy.

a lot of people are speaking badly of velveeta.... it was created because we asked for it...convenience... we pay more for convenience...a lot of times, though, when there is too much of something, it is overpowering and does make us sick...american cheese is awesome,..not as easy to work with, but worth the effort if you don't get ill....also, cheddar melts well, when done right, like in mac & cheese...but, no, there is no perfect substitute for velveeta!! it just makes a darn good dip....
