Hello Kraft Community, we are very excited to share some great news with you. As loyal Kraft Community members we have heard your desire to do more fun things in the community and we are happy to announce in January 2010 we will be making some changes so you can connect and share food ideas in more ways than ever!
We want to let you know we will not be transferring the existing discussions to the new enhanced message boards so if there are discussions that you would like to save please make sure to either print them or copy and paste into a document that you can save to your personal files.

Yuck! Not only is Velveeta nasty-it's expensive! I'm usually the one avoiding the recipes that call for velveeta or any processed cheese for that matter!

Jen, I don't have a certain recipe in mind, I just seem to see Velveeta in a lot of recipes. They look great, but I keep avoiding them.
Foxxxy, I have thought about it actually, but like the post before yours says, velveeta has a certain texture and stays "liquidy." I use shreaded cheese when I can, but for some recipies I think regular cheese would either burn, maybe greasy, or would not be as smooth as velveeta.
I'm sure that cream cheese would work for some recipes, it all depends on what I'm making. I'm sure that is why Jen was asking!

obviously one of the selling points of velveeta is how smooth & creamy it is -- it would be difficult to sub it and end up with the same texture, but a good alternative might be to make a simple white sauce (butter, flour & milk or cream - try using evaporated milk for richer, silkier texture without all of the fat & calories of cream), then add shredded cheese to the mixture. remember that the sharper the cheese, the less you need to impart the flavor. a little more work than just throwing the velveeta into the pot, but it may be worth it.
