How do you know when it's done? Going by a set time doesn't really work, as someone giving a time might have a hotter or cooler cooking crockpot than I do.

A couple of tricks to get moist chicken in the crock pot: Use bone-in chicken - the bone helps it retain moisture. Also, start it in frozen in the crock pot. Works for me most of the time.

I find that dark meat chicken works best in a slow cooker. I don't find the white meat rubbery but it does get very dry. This is masked by sauce a lot of times, but it's dry nevertheless.
Plus I think dark meat tastes better. We prefer drumsticks.
I make chicken parm with boneless, skinless breasts that I pound out to make them even thickness. Then I coat them in flour, seasoned egg and a mixture of crumbs and parmesan cheese.
Oven fry them for 20 minutes or so.
Serve ontop of spaghetti with homemade sauce fromthe freezer and some gooey provolone and mozarella cheese. Crisp salad and garlic bread.
This is an excellent dinner that you can make in under an hour. The leftovers make excellent sammies for next day's lunch.

I don't always have time to cook when I get home - especially since I leave the house at 5 am and don't get home until 9 pm. I work full time and am also a full time grad student. I like the white meat in the crockpot and so does my family - never has it been dry or rubbery.

Cooking white meat chicken in a crockpot with tomato sauce is a BIG no no. It gets dry and rubbery in no time.
Do it on the stove. It cooks in literally minutes.

Have you ever tried making chicken parm with little boneless pork chops? They're called "breakfast chops" in my store. Turns out very yummy!

Beef can be cooked for a long time but chicken just dries out. Its fully cooked when it gets to 165 degreees. If you keep cooking it you just drive out the moisture.

That's an excellent point. The only chicken dishes I make in the crockpot are ones with broth-based recipes, as then the chicken comes out very moist. I'm not sure how well the chicken, or the marinara for that matter, would survive a long, slow cooking like that. Wouldn't the sauce itself end up becoming far too thick and maybe even burnt onto the sides of the pot, even on low? Or do you have a trick to keep that from happening?

Lots of sauce needed becasue the chicken will be dry and tough if you cook it all day in a crockpot with acidic sauce.

Wow! My husband can't stand Tyson Chicken, either... However, this is an easy, quick recipe that my whole family does enjoy. When I am too busy to spend a lot of time in the kitchen, this is perfect!

I would just take those chicken patties, put sauce and chesse on top, and throw it in the microwave. That lady who's kids do the cooking might be interested in that one.
