my family loves shepard's pie so I use the leftover meat loaf in it. Breakit up into small pieces, mix in a can of cream of mushroom soup, corn, peas, carrots, and green beans, top with mashed potatoes heat thourghly, top with cheese and cook longer till cheese is melted.

I like to break the meatloaf into itty bitty pieces and mix it into Easy Mac. The kids like theirs with ketchup on top and my husband puts chili sauce on his.

I take mine...break it into meatball size pieces put it into a sauce pan and douse it with my favorite spaghetti sauce. I serve it on rolls with lots of mozerella cheese. It tastes WAY better than meatball subs...my husband looks forward to this everytime I make meatloaf!

I love meatloaf sandwiches. When I make meatloaf, I make a sauce for the top with ketchup and brown sugar or ketchup and syrup. I love this. It gives it a little sweet flavor and I put it on 5 minutes before I take the meatloaf out of the oven. When I make a sandwich with the leftovers, I use white bread and mayo. It already has the ketchup sauce on top so that's a little additon to it. It may not be enough for everyone but I like to take it for lunch the next day. It's very yummy.

A friend of mine seperates the meat loaf before she cooks it making one small meatloaf. With the remaining meatloaf mix she will either make another small loaf and freeze it for another day (unknown to her family) or she will make meatloaf muffins. Her family can grab one out of the fridge and eat it on the go. I haven't tried this but her husband raves about the meatloaf muffins!

I like to make a cheeseburger macaroni & cheese casserole with leftover meatloaf. Break it up into little pieces and mix it with cooked macaroni noodles and a can or two of cheddar cheese soup and some frozen peas and corn. Pour into a buttered casserole dish and top with shredded cheddar cheese and bread crumbs and bake at 350 for about 30 minutes or until bubbly and browned on top.

Use of left over meatloaf

I have a family of four and every time I make a meatloaf there is always some left over that is not enough for everybody. So what I do is chop the remaining loaf of up into little bity pieces and add them to my favorite store bought or home-made spaghetti sauce. I am always looking to find new ways to use left overs. My family will not eat them to save their lives (I can't be the only one) unless I can find a way to give it new life. Just wanted to share one of my favorite ways to fool my family. And it is delicious. Anybody out there have a creative way to do the same please let me know.
